    Try avoiding table salt as they can kill the bacteria and avoid using tap water which is chlorine treated. Also use parboiled unpolished non gmo variety rice like Usna or Ponni. I tried a lot of method to get the best result like we make them traditionally in Odisha. The fermentation is little trickier as weather, water, types of rice variety everything matters to get the best result

    In tamilnadu we drink kanji which is get after rice cooked in pot. We also put water in leftover rice of last night and eat in morning for breakfast and also we added curd and some onions & chillies. It was taken by a famers mostly in tamilnadu to get stamina for work in field....

    In West Bengal we call it "Pantabhaat".. we eat it with rice.. we add green chilli, lemon, onion, salt, posto bata(poppy seed paste), mustard oil.. some eat it will mash potatoes too.. it's DELICIOUS!!!

    I am from chhattishgarh and there is out a dish here called "bore baasi" Its made with leftover boiled rice with soaking it in water overnight for,8-10 hour as you said in the video....

      Hi, so you see every state consumes it and they have different names to it in different regions. It is not confined to one area or region.

      We have it in Andhra too, an age old recipe usually consumed by farmers back then. We call it "Gangi." At times, we add onions and green chilli to the rice,just as shown and ferment it. Then consume it along with the rice instead of straining. This makes an amazing breakfast called "Taravaani" in some areas of Andhra. So, you see it is not confined to a single place, but many states in India consume it.

    PALAYA SORU ,our grandma use it make and make to drink us
    But in the morning
    The rice is squeezed along with
    Same water it soaked and green
    Chilli and small onion also squeezed and little curd added in it.

    In Gujarat Rural Vyara we prepare this almost everyday. It is called 'Bhadku'. Evry hard working labourer has this before work and its so versatile that people have it for lunch and dinner too.
    Preparation is different byt it's the same fermanted drink.

    In Bengal, we eat Panta Bhaat which is somewhat similar to this. Only difference between the two preparations are, in Panta Bhaat you don't need to separate the rice from the water. We add salt, jaggery or sugar and sometimes milk too to increase the taste of the fermented rice. Also, we add potato preparations like Aloo Bhaja, Aloo Seddho; green chilli, onion as side dish with Panta Bhaat.

    Lol we in Assam have been having this from the beginning of time and this is the staple food of Assam and it's nothing new for us. This is poita bhaat and we have the rice along with water with some mustard oil, onion and green chilli.

    I am from kerala we call it pazhamkanji and we dont remove the rice . Just mix curd onion chilli in it and have for breakfast . Its healthy and keep us cool.
