For Unity, I usually use the POLYGON Prototype Pack by Synty. It’s mostly used for low-poly blockouts, but it also has some great assets for metrics that can be applied to any type of level design.
Not that I know of; however, you could try the free tutorials by Unreal Engine, Creating a Level Blockout for Game Development, and Exploring Level Design for Game Development. They include some grid materials and simple props you can use for your blockouts. If you're looking for a tool to simplify creating shapes and prototyping levels, check out the Cube Grid tool, which is already installed in the engine. I also have a tutorial on my channel that explains how it works.
