During my trip to Saguenay I spent 2 nights at the Gîte du Haut des Arbres Hotel, though it's more of a cottage than a standard hotel.
When it comes to cool places to stay in Saguenay the options are a bit limited. There epecially isn't a lot of options for Saguenay accommodation outside of town but still close to everything you could need.

The Gîte du Haut des Arbres Hotel is a great place to relax or use as a base to explore the Saguenay and Chicoutimi region. It's a short 10-minute drive into Saguenay and close to all the main roads and access points for exploring this part of Quebec.
