For the recipe:
-2 chicken Breasts;
-1 onion;
-1 carrot;
-Pairsley or coriander (cilantro);
-Salt, peper and smoked paprika to taste;
-2 cups (500ml) of the chicken broth;
-2 cups (500ml) of water;
-1/2 cup (100gr) of unsalted butter;
-5 Cups (600gr) of all purpose flour;
-Egg;
-Breadcrumbs for breading.

I am watch 3 different you tube video's on this and I see how they all slightly differ from each other. For example in this video he uses milk for the dough and in another they just used water and chicken broth. Also I would use flour then egg wash and then the crumbs. Overall great video

in the description it should say 500ml of milk not water. I'm cooking this now and there's something wrong with the measurements for the dough there's too much of it and it's too loose I can't keep adding flour cause it's gonna end up tasting like flour :/ disappointing

Yeah im from Brazil, and here we make them in every size, u can even found 1KG coxinha, but they are too big to eat alone

Why milk to the dough? Everybody else ate using water or the chicken water..will the dough be softer?

How do you make the sauce to dip the Coxinhas in ?
Can you bake them instead? Which sauce goes well with these?
Bake them for around 20 minutes on medium (or until golden)
They're street food, so usually they're eaten with hot sauce or ketchup

What’s the sauce in the middle of the plate?
I trie with all-purpose flour and it didn't work. Which type of flour should i use? And what kind of breading should i use to replace the one used in Brazil ??
In brazil we use the regular wheat flour (it should be ypurs all purpose flour, i think, try again and that should work). About the breading, we use the most common bread in brazil (google 'pão francês') when its hard to make the panko, but you can use smashed crackers or the panko you guys use there.
We had that go wrong once because we used too much stock and the dough never formed, is best to do a small amount and add the remaining little by little to make sure it works.
Another thing that’s interesting, I sometimes can’t make bleached all-purpose flour to work and get to the consistency I like... when I use organic unbleached the food comes out magical, much more fluffy on the inside, much better tasting, and for different types of recipes. Here in the US we have lots of low-quality flour... go for the better kind and it will do wonders

I tried making this but my dough didn't come out good what am I doing wrong
The amounts of liquid and flour were not right. And he took the dough from the pan too early. It has to loose from the bottom really well. When you are rolling the dough it should stop sticking to you hand even if you put some flour around to allow you to work the dough, but not to much... or it will taste bad. AND... never, ever, put cream cheese in the filling. 60 years Brazilian here never had coxinha with cream cheese. There is thing in Brazil now to put cream cheese in everything and I bet it made your dough softer than it was because of the amounts. I know you wrote this 2 years ago... maybe you can try again :)
