I do the same! Get quite a lot of rice in little bags in a small amount of freezer space. Easy, quick every time. I think it takes about a minute in the microwave to get it piping hot.
It is extravagant, and I feel very blessed to be able to get one. Here's what I think - it's going to be so popular that the prices will seriously lower and make them more affordable for everyone. I really never thought I would own one!

Squash will freeze dry well, so will courgettes (zucchini) and most herbs, as long as they don't get "freezer" burned. Most berries should dry well too. Essentially that's what raisins are, dried grapes. Not sure about figs, unless they're a particular species, but I could be wrong on that. Half and half may not turn out well because of the butter fat content.
It is going to be so fun to experiment! I think diluting the half-and-half with water (I know this sounds counterintuitive) will also dilute the fat concentration and might freeze-dried better. But I'm kaput on my lab coat and see what works!

You should check out Mrs Cog Hill Farm as she tries different things in her freeze dryer. Little Mountain Ranch uses vacuum packed bags. You can do things that you can normally only pressure can like courgette/zucchinni and beans. Well excited for you! You should do some videos on some of the stuff you make.
Audrey, is it a Harvest Right? You’ll love it!!! We use ours a lot! Have fun! There is a divider to put in the trays so sauces can become cubes. Note: freeze-drying sliced roast beef…be careful not to “bump” it too much or you have roast crumbles. 😁 Ground beef works fine.
Our ancestors were ALL preppers. Squirrels are preppers. If they didn't put food by for the winter, they'd starve. It's the same thing. It can be as simple as growing your own or keeping a few cans in the pantry to full-scale storing of food, clothing, tools, etc, for the years ahead. The people you don't want in your neighbourhood who have nothing to support themselves during an emergency are those with a can of beans and two slices of bread as the sum contents of their kitchen food cupboard. Having been in a situation in my 20s, searching through the cupboards for something to eat at the end of the month before payday and only having ketchup, I vowed I'd never be in that situation ever again.
Tony, if I can't have half and half in my coffee, then I won't drink coffee. Also, freeze-dried herbs are wonderfully full flavored to be added to recipes when you don't have fresh.

Audrey my dear please don't freeze pre cooked rice it will make you quite unwell as it won't freeze quickly enough to stop the bacteria growing,buy vacuum packed pre cooked and save yourself the bother,with regard to tomatoes i skin mine and then freeze the smaller ones whole I'm still using last years tigerella and small aubergines,and diced onions once sweated until soft and allowed to cool freeze very well indeed.
If the freeze dryer gets below -10=F there's little chance of any bacteria or fungi growing. As long as the riced is cooked, cooled then freeze dried it should be fine.
Noooooo! You need proper fats in your diet! "Low fat" is just one of those scams you've been sold for decades. It makes you sick. The beauty of freeze-driers (I wish I had one) is that you can freeze-dry all kinds of food and store them in Mylar bags with Oxygen Absorbers to keep it dry and halt deterioration and it'll last for decades. It's a big preparedness thing. A life-saver in hard times. I'm seriously thinking of getting one. I'm already using a couple of dehydrators, but FDs are great. Sadly, they are several thousands of pounds in the UK. It's a big investment. I've bought those tubs of FD chicken to stick to the back of the cupboard, but they are SO expensive. Pot Noodles and mountaineering/hiking packet meals are freeze-dried. Many of them are fine.

It would be interesting to try making jerky, marinade then dry. Most jerky bought isn't smoked anymore, but commercial production is used with heat.
