Ingredients- pounded palm jaggery- 2 cups Coconut milk Little Millet/ barnyard/ kodo- any of them half cup before use soak Millet for 6-8 hrs Toddy palm jaggery/ silver palm jaggery/ coconut palm jaggery Soak the palm jaggery with half a cup of water for about half an hour. 1 tea spoon of poppy seeds 250 to 300 ml of coconut milk it’s always best to extract the coconut milk freshly at home. Cardamom powder. To make palm jaggery syrup heat the jaggery that is already dissolved on a low to medium flame. Once it comes to boil allow it to simmer for 4-5 minutes until it just begins to thicken. Then filter using steel sieve to remove any unwanted particles and keep it aside. It can be kept for one week and no need to refrigerate. Transfer the soaked millets in mixie jar, with sieve separate Millet and water used for soaking, keep this the water aside for later use in the recipe. Also add the poppy seeds in the mixie jar. Now grind them together into a smooth fine paste make sure there is no particles left and it is really smooth now transfer into another thick bottomed vessel so that when we will put it on gas it will not burn, add in the ground paste, add in the the water that was used for soaking in the pan with paste and another additional cup of water, mix well and make sure that it is not too thick before switching on the flame this is too ensure that it does not form lumps as soon as the flame is switched on now switch on the flame and with continue stirring allow it to cook for about 8-10 minutes. Make sure the flame is low to medium while it cooking if it becomes thick you can add in some more water to adjust the consistency u can also add in a teaspoon of ghee to prevent lumps from forming. If u like to keep this dish vegan u can add spoon of oil instead once it comes to boil and all the rawness is gone start adding in the palm jaggery syrup little by little while continuously mixing. Add entire one and half cup of pounded palm jaggery. It can be added more or less depending upon how sweet your palm jaggery is and how sweet you prefer your kheer to be. Allow everything to simmer together well for about 2-3 minutes. Then add in the coconut milk and mix well together. Don’t boil kheer too much after adding in the coconut milk just to avoid splitting. Switch off the flame and add cardamom powder. Pour it into the cups and top it with cardamom powder
