i love your knives, i own a few. I did make a mod to your last rendition. Its now a zero bevel knife, no second bevel at all. i find that it cuts better than having a micro bevel on the knife. I might have to sharpen it more, but i think the performance is worth it. great video brother.
Good discussion of knives. I have had good luck with flat ground knives, poor luck with Scandi ground knives. I think the flat grind leaves the edge a bit weaker and can cause problems with the edge 'wandering'. Perhaps a grind that would be a high flat scandi grind would be a compromise. That would give the stiff backbone that your knives have, but would be an easy cutter. The distal taper is more important than the grind, though. All of your knives have a good distal taper. The curve downward at the tip gives good stiffness to the cutting also.
Which wood are you using exactly? The cuts look extremely smooth. I always have the problem with lime wood that it is too fibrous. Maybe I've bought the wrong wood so far, as there are certainly differences between the same types of wood.
