1 Puff Pastry sheet, thawed but cold
3-4 tomatoes sliced into 1/4 inch rounds
2 Tablespoons Dijon Mustard
1 Tablespoon grated Parmesan
2 Tablespoons crumbled Feta
Salt and Pepper to taste
Fresh Basil, chiffonaded or torn
Extra Virgin Olive Oil
1 Egg whisked for brushing pastry
Can also add real Bacon Bits
Roll out puff pastry to about 13 inches long. Place on a parchment paper lined Baking sheet. Dock with a fork and prebake at 400 degrees F for 7 minutes. Allowing a 1 inch border, paint on mustard with a brush. Place tomato slices in a single layer. Sprinkle with Salt, pepper, parmesan and feta. Paint egg onto the 1 inch border. Drizzle with olive oil and bake at 400 degrees F for 15 to 20 minutes. Sprinkle with Basil and another drizzle of Olive oil. Slice and serve warm.

I sure am enjoying watching you today Amy! I'll have to try this and your rustic pizza. I want to share this Zucchini-Tomatoe Tart Recipe. Make 1 store bought Prepared pie crust by seasoning to taste and baking about 6 minutes@ 425... line crust with SAUTE'D thin Zucchini slices. Top with thin tomato slices, then top with a mixture of 1/2 C mayo, 1/3C Chopped basil, 1/2 C Parmesan S&P + extra grated Parmesan cheese to top with. Bake at 425 til bubbly and golden. I love making it every summer!

I too make tomato tarts of various crust, toppings & cheeses. When I make Greek pizza with filo after blotting the tomatoes I also put some fine bread crumbs on top of them. It helps absorb too...learned that from Greek cookbooks! Yours looks delicious!
Yes the bread crumbs are a great tip. I visited Greece last winter a year ago and bought some cookbooks. Cannot wait to have the time to cook from them.

Hello from KY love you and your channel and your family ❤️.Amy girl,love the pizza idea.I am gonna try it.Nothing is built to last these days.Our brand new stove taking it off the truck the door shattered and no one was near it.That was really weird.Girl I remember in the 60s and early 70s the tv repair man came to the house and work on the tv.Was always a picture tube.😮 The other other stove quit working after 5 years. Both electric stoves .It is such a racket these days.❤
