How To Make Perfect Vegan Pancakes

  • Pancakes are Liz's favorite food. So I made it my mission to learn how to make the BEST vegan pancakes, from scratch. See below for the recipe!

    D + L's Vegan Pancakes Recipe:
    2 cups all-purpose flour
    4 Tablespoons sugar
    1 teaspoon salt
    2 Tablespoons baking powder
    2 cups unsweetened non-dairy milk
    1 cup unsweetened plain non-dairy yogurt
    3 Tablespoons canola oil
    About 15 ml flax goop (optional - see below for recipe)
    In a large bowl, add the dry ingredients together and mix with a fork.
    In a separate bowl, add the wet ingredients and whisk together. Or just just a fork again.
    Pre-heat your pan for 5-10 minutes. I typically start at medium heat, then reduce it to low-medium before adding the batter.
    Pour the wet ingredients into the dry ingredients and mix with a fork. The consistency should be like a thick smoothie: pourable, but not runny. (If you used a thick yogurt, you may need to add more milk.) Only mix until most of the flour is wet; over-mixing will release C02, making for a less fluffy pancake.
    If you are using stainless steel or cast iron, lightly oil the pan before adding the batter, and in between every couple pancakes. You do not need to oil non-stick pans or a griddle.
    Use 1/3 cup to pour batter onto the pan. You should hear a light sizzle right away. If not, turn the heat up a little.
    Wait 2-3 minutes or until the bubbles in the middle are popping. Flip the pancake decisively. Avoid the temptation to smoosh it with the spatula.
    Cook the other side for about half the time you cooked the first side.
    You will need to adjust the heat as you go. A blonde pancake means the heat is too low; a dark ringed pancake means it’s too high.
    NOTES:
    Use organic/raw sugar if you want to keep it strictly vegan, as white sugar is filtered through bone char. If you only have white sugar, however, better to use it than to waste it.
    “Double Acting” baking powder is best because it has two fluff-making reactions-the first when it hits a liquid, the second when it hits the heat. Don’t be scared by aluminum in the ingredients, it’s harmless.
    Check the expiration date of your baking powder. If more than a year past expiration, test it by putting a small amount in warm water - it’ll fizz up if it’s still potent. Also shake the can before you scoop.
    Fattier milks such as soy and coconut work best in this recipe.
    Non-dairy yogurts have a range of consistencies. So Delicious and Blue Diamond are on the thinner side. The thickest I found was Oatly, which worked better as a 1/2 cup instead of a full cup in the recipe. If you find your batter is super thick, add more milk.
    How to make flax goop:
    3 cups water
    5 Tablespoons golden flax seeds
    Add seeds and water in a small pot. Bring water to a boil, then reduce to a simmer. Stir occasionally as you simmer for about 25 minutes with the lid off. Turn off the heat and let it cool for at least 10 minutes.
    Use a fine mesh strainer to catch the seeds as you use a spoon to filter the goop through the bottom. If you don’t have a fine mesh strainer, you can extract the goop directly from the pot, but you might take a few seeds along with it. No big deal.
    Use a kitchen syringe (we used one from a baby Tylenol box) to suck up the goop.

    Secret ingredients to add to your pancakes to make them the bbombdiggity:
    1 Almond Extract (1/4 - 1/2 tsp)
    2. About 3/4 cup Cooked Cream of Wheat (or rice if gf) This gives them that IHOP Griddle Cake Flavor

    I have a waffle batter recipe
    which I need to try in a pancake form
    the recipe is:
    1 ripe banana
    1 cup of oats
    1 cup of non-dairy milk
    whizzed in the blender and poured
    in the waffle iron
    they come out fluffy!
    Which is amazing
    as they have no rising agent in them.

      I haven't tried it as a pancake
      and I use a high speed blender
      that really REALLY aerates the mixture
      so I guess I have been lucky

    pancakes are my favorite food too! i eat them for breakfast literally every single day (but i make mine in the blender) 😍 sometimes for lunch too ( but on occasion i dooo add protein powder to them so they’re not JUST oats, cinnamon, banana, baking powder and water) 🤭 love them topped with any kind of jam

      I'm from the UK so I don't know what brands you have in the US, but I would recommend trying a pea-based milk, they tend to taste good and they've good for protein too. My favourite is a pea and oat milk blend.

    thank you so much for sharing this recipe!! i've never made vegan pancakes before because it seems most recipes insist on some expensive/gimmicky ingredient that i don't already have. I had all of this stuff in my house and made these today, amazing! for anyone using sweetened dairy-free milk (i used oatly) i just halved the amount of sugar i added and it tasted great

    So glad to see a post from you! But tossing that flour and sugar broke my heart. Could have used it for something else or adjusted the ratios of the other ingredients.

    If you want to make savoury Breton galettes you need only buckwheat flour and water - you can have them with so many things like fried mushrooms, scrambled tofu, chilli, curry - anything 😋

    Believe it or not, even though they say that you should cook them right away, I've found that waiting 5 minutes or so makes the pancakes better. I think that's why the last pancakes came out better than the first ones. Good job!

    thank you for this recipe, I didn't have the yogurt or flaxseed and I used olive oil instead of canola. and squeezed a half of lemon and only had brown sugar and omg these pancakes were so good. I didn't even need syrup. lol

    You have NO IDEA how much I appreciate the tip about the pricier flax seed! I never knew about that, and TBH I kinda hate the way that flax imparts that nutty flavor, especially in cookies! When you are trying to replicate classic recipes, and serve the item to non-vegans who are looking for things to taste weird, the last thing you want is some extra flavor in there that brings attention to the fact that the recipe is different. I will definitely spring for the expensive flax seed, it looks totally gross and slippery and sticky just like a chicken's egg white. Perfect! Thank you!

    You could also try experimenting with Aquafaba (chickpea brine). Some people swear by it. It is used for vegan soufflé like recipes.

    I'm so happy that y'all are back! I've always had issues making pancakes from scratch them turning out pale so I gave up. Box mixes always seem to work, I'll try this recipe!

    Baking soda is definitely key. I also like using oat flour (grind regular oats in a blender) and frozen cherries are awesome in pancakes.

    my favorite is a store bought mix, birch benders brand, i either use the classic recipe or mix classic recipe and the plant protein one (70/30) for some added protein. Add water, crushed roasted hazelnuts and vegan chocolate chips. Make sure pan is very hot, and it makes the perfect pancakes. I don't bother making from scratch when the store bought one is so convenient and good, no crazy ingredients either (pretty much the same as what i would use at home)

    Very nice! I add mashed banana and applesauce in mine in place of sugar or yogurt with a little oil and it's so so bomb 💕 oh and of course gotta use a cast iron pan it makes it fluffy & golden. My recipe: 1 cup flour, 1 cup plant milk, 2 tsp baking powder, 1 mashed banana, 1 tbsp oil, 1 tbsp applesauce, pinch of salt, 1 tsp vanilla = delicious nom nom

    I make my pancakes with oat
    Bananas flax eggs baking soda and the other one baking powder I can remember now the name.soy milk vanilla pinch of salt.i just blended all together . Mmm and a eater with maple syrup or agave syrup.

      I read a lot of recipes that recommended letting the batter rest, supposedly to let the gluten develop. But I found a longer wait = less fluffy pancakes. There's quite a bit of mystery and variation for such a simple traditional dish

    Your recipe is just about spot on with mine. However, I use vanilla extract. Also, you'll know your pan is the perfect temperature if you wet your fingers, flick the water onto the hot skillet and the droplets sizzle and disappear in about 2 seconds. If immediately, then the pan is too hot. If longer, then not quite hot enough. And btw, if IHOP is your standard then...nope. lol I prefer pancakes with a slightly crispy edge and super light and fluffy throughout. Kinda like a Cracker Barrel pancake. I achieve this with coconut oil. Love you guys 😊❤

    I use baking soda + apple vinegar instead of the egg. Also, I never make small ones, just big thinner ones. Best toppings: peanutbutter or buttet/powdered sugar

    my favorite recipe is:
    dry ingredients
    -1/2 cup + 1 T flour
    -1 tsp baking powder
    -1-2 T sugar
    wet ingredients
    -1/3 cup plant milk
    -1 tsp apple cider vinegar (reacts with milk for a buttermilk consistency)
    -3 T apple sauce (I usually skip though)
    -1/2 tsp vanilla
    -2 T plant milk (optional if the batter needs a better consistency)

      Yes we tried Califia vegan butter for the first time, which doesn't have palm oil. Tasty

    These pancakes are beyond fantastic. The non vegan members of my family love them as much as the vegans, and both parts are super critical. Thank you so much for working on this recipe! One question - how long can the flax goop be used when stored in the fridge?

      we store it about a week in the fridge. and so glad everyone loves the pancakes!

      Yeah, I've kept it in the fridge for at least a week. I'm sure you could freeze it for longer.

    I really like this 3 ingredient/flourless pancake recipe from plantbasednews.org (it is quite a filling pancake imo, so you can't eat too many without your stomach hurting but they're so good!)
    1 medium banana
    1/2 cup (45g) rolled oats
    3 1/2Tbsp dairy free milk
    Method: blend ingredients, grease frying pan (generously), pour batter into pan, once cooked enough then flip, fry for additional minute on other side & serve :)
