Great video. My husband and I were wondering if you still cover it with foil while its roasting in the oven since it cooks so much quicker using this technique. Im going to still cover with aluminum foil just in case. Ill check on it throughout its cooking time I guess. Great video though. Very helpful.
Not really. Turkey is dry and tasteless without seasoning penetrating through the thick meat. Dry or wet brining should be done. If you don't have time for that, injection is your next best option.
