    Kuru Fasulye & Pilav
    Servings: 2
    Difficulty: Easy
    Cooking time: 10 minutes
    Prep time: 5 minutes
    Ingredients:
    For the Pilav:
    1 tablespoon of butter
    2 tablespoons of olive oil
    2 tablespoons of vermicelli
1 cup of rice, soaked and drained
    1 pinch of salt
    1+3/4 cups of boiling water
    For the Kuru Fasulye:
    1/2 onion, chopped
    1.5 tablespoons of butter
    2 tablespoons of olive oil
50 g of sucuk, sliced (you can use any cured meat)
    1 clove of garlic, sliced
    1 green pepper, thickly sliced
125 ml (1/2 cup) of tomato puree (you can use tomato juice or passata)
    1.5 pinches of salt
    1.5 pinches of black pepper
400 g of boiled or canned white beans, with cooking water.
    Instructions:
    For the Pilav:
In a small pan, add the butter and olive oil, and brown the vermicelli.
Add the rice to the pan, continue to sauté, and keep stirring. Be careful not to roast it too harshly, as this may release their starch and cause the rice to become mushy.
When the rice turns transparent, add the boiling water to the pan, give it a mix, close the lid, and place the pan on a low heat burner. Simmer until all the water is absorbed, then turn off the heat. Let it rest for 5-10 minutes.
    For the Kuru Fasulye:
In a small saucepan, add 1 tablespoon of butter and olive oil, then sauté the onions.
Once the onions are cooked, add sucuk, garlic, and green pepper to the saucepan and stir.
Pour in the tomato puree, add salt and black pepper, and when it starts to boil, add the white beans with the cooking water. Stir well.
To make the "kuru fasulye" brighter and more delicious, add a last-minute pat of butter and a pinch of salt and black pepper.
When everything is ready, transfer the pilav to a dish and add the delicious "kuru fasulye" on top of the pilav. You can enjoy this dish with some pickles and a teaspoon of mustard.

Linda here…I love everything you do! These quick, inexpensive meals are awesome! We live on a sailboat in the Caribbean and beef can be expensive and difficult to find. The animals they raise are very lean, too. I love the idea of vegetation dishes that can be seasoned with meats. Our “kitchen” and refrigerator is so small that most of my time is spent provisioning and prepping for meals. I have to have everything prepped before I can start cooking. I often prep carbs like potatoes, rice, beans the day before and refrigerate for the benefit of resistant starches that will raise blood sugar less. Also, the heat can be unbearable in the summer and I often don’t cook…just salads and non-cooking dishes…perhaps you could look into that? Thank you so much for all you and your crew do. You’re all a lovely group and I get so much joy from watching and sharing your videos.

One of the things I love about Turkish cuisine is that yogurt is served so often with many of the dishes. I used to eat it only at breakfast, but now I enjoy it throughout the day and savory as well. ❤

I totally love how you don’t waste anything, Refika. I sometimes feel a little crazy because I always am running outside dumping my rinse water on my plants when I’m cooking and secretly burying my vegetable scraps through my yard. I live in an HOA (which I know would freak some people out, and they might try to stop me from gardening altogether). I just hope more people around the world catch on before it’s too late for everyone.

    • @kaymgee08

      What is a HOA?

    • @montananerd8244
      @montananerd8244 7 місяців тому +2

I'm sorry you have an HOA with such rules 😮 I thought they were only for really rich people, but I've heard in some places, nearly all the available houses are HOA. It's hard when you are doing good, frugal, ethical things like planting scraps or drying on the line. My neighborhood gets a little shabby at times, but we have yards with art projects, big gardens, and all kinds of unique displays reusing "junk," which I love.

You don't. Food in the US is very expensive, certainly compared to Europe, almost everything. And the there's the poor quality. Take a few minutes to search youtube for US food price comparisons with the UK for instance.

    • @kathleenkocan628

@@jonathanfinan722 I live in one of the most expensive markets in the United States. However, there are always deals to be found. We also have such variety and abundance. Other parts of the world have been struggling for decades. The increases in the United States are in line with the increases seen globally since Covid. Especially when you subtract the fact that large box supermarkets are price gouging their customers. Seek out small ethnic grocers and you will find the true cost of food in the United States. You will find prices per pound on produce, meat and fish that you won’t believe. Or perhaps I misunderstand you. Are you saying the US doesn’t have it good. I’ve traveled extensively and trust me. It’s good here. You don’t have to feed your family junk food. That’s a personal choice.

    2) Instead of sausages I broke up left over meat from bacon beef burgers.
    3) Instead of wheat vermicelli I broke up dry rice (with bran) spaghetti noodles. I've never fried pasta before and I can eat that as a snack! It's delicious!

Ah lovely - certainly a mouthwatering dish, to say the least! It's a wee bit like the vegetarian dish, 'Rajma-Chawal'(which translates to red kidney beans and rice) that we make back in India! Love your channel, your recipes and you! Thanks for whipping up tasty, delish recipes episode after episode - truly enjoyable, both to watch and try out. Best regards all the way from New Zealand.
