Weber Q Pork Roast (With Crackle!)

  • Cook a great rolled pork roast with crackling.
    Stuffing recipe ingredients :
    4 slices of bread, crumbed
    100g butter, melted
    2 tbsp dried sage
    .5 cup parsley, chopped
    3 spring onions finely chopped
    100 grams macadamia nuts roughly chopped
    Salt, Pepper
    Mix all ingredients.
    Voila, stuffing.

    I’ve watched this 3 times now for my Xmas roasts 😎👍
    I always forget to pull the pork out to prep it a few days before the cook up, but have found a cheat to get crackle.
    Pull the pork out of the vacuum seal in the morning and wash & dry it. Lay it on a rack over the sink and pour 2 litres of boiling water over the skin. Pop it in the fridge for a couple of hours (ideally 2-4hrs), then prep & cook it as though you’ve had it in the fridge for several days. You will get excellent crackle results this way, believe me.

    I like this. Nice to see you and your lad getting into it. My son loves crackling too but I do mine on a Weber kettle with a rotisserie so it's a bit daunting to offer help... except for when it's time to eat! Proper crackling always brings a smile! Nice video mate. As a video editor of a TV show millions of people watch, I like the production value added by your videographer. Cheers.

    Had a Weber Q for years. Looking how to roast with it for my next Queensland camping trip. Love that your son in involved in the cooking, I did the same great life skills. The thermometer looks good.

      Great video mate, I subbed 👍, did you bone the roast and roll yourself? Maybe that’s another video you could do?
      You thinking of getting the rotisserie? Some folks swear by them for the roasts, I’ve never tried it.
      I got the same bbq too mate, I smoke lamb roasts on mine, so good.

    Secret is to make a few cuts in the skin. Salt heavily. Leave in the fridge over night. Remove salt with clean brush or paper towel. Then rub on oil :)

      It took almost 3 hours which is very weird because I have cooked 2 more since this video and for the same weight and cut took just under 2 hours. I think the only rule is - use your meat thermometer and go by that :)

    You don't need oil. If you score the crackling then this will allow the pork fat underneath it to bubble up and self baste the meat, doing a far better job than the oil will do.

      I have always used olive oil but have never tried without. Is it much better? I would think it would burn without the oil coating
