    Barley and Mushroom Soup Ingredients : 1/2 cup Pearl Barley (Soaked), 2 potatoes (Diced), 2 Cups Diced Button Mushrooms, 1 Bay Leaf, 4 Carrots (Diced), 4 Cloves of garlic, 2 Onions, 2 Ltrs of water, 1 tsp Butter, 1 tsp olive oil

    This soup was delicious. I soaked the barley, used its water but the biggest thing I learned was to give the vegetables time to sweat and release their flavors before adding the liquid... Your mother-in-law had a winner :)

    Thank you, I finally found a barley recipe that I like, I just left out the mushrooms, stringbeans, potatoes.. It came out great... I would not eat barley before, because it was too bland... You to you, I will be eating more Barley...

    Barley is so healthy and packed with protein! I just made a large batch this afternoon to freezing portions for doing just this, making soups pilaf breakfast casserole. :-)

    Great recipe; can't wait to try it! I never peel my russets or any potatoes; that's where the fiber is and the fiber reduces the glycemic level of the potatoes. but some people are bothered by potato skin, I guess.

    I have 10 lbs of pearled unhusked barley and it cooked in roughly 30 minutes today with no soaking.

    Hi, good evening. Saw your recipe.. looks very healthy and nutritious… I m surely going to try today for dinner itself…By the way, 2 suggestions: 1. I think the carrots are a bit too much, probably little lesser would be better. 2. If you add some milk in this recipe, won’t it be better?

    Hello enjoyed your video i do like to cook often and wil try your recipes, i did want to clarify something as there are so many different options on food but perhaps you can go see this fellow Dr Gundry and see what he says about olive oil, i belive he states that you can indeed cook with it and that it does not break down, just thought i'D ADD THAT IN. tHANKS

    We used to make a version of this which country soup but we added pound of beef mince or turkey mince. We also used either Turkey or beef stock instead of water. But let the soup go cold and take off any residue or fat from the meat which will be floating on the top.

    Potatoes aren't the problem the toppings are. Potatoes are full of nutrients and fiber so one small to medium potato is going to fill you more than the same amount of other things. For vegans and vegetarians organic is not vegan or vegetarian. Ground Up Animals bone meal fish that is fish only for fertilizer and by product along with tons of manure are used to grow organic. This means that they are funding the animal cruelty industry and these animal products can be systemic throughout the product.

    You may DEFINITELY cook with olive oil!! ?? Why do people say that? Yes you have to watch temps, but, if it is so bad I guess Greeks, Spanish, Italians, Turks etc. just have to change oils. You let them know that please!!

    Most people who I see cook this dish soak the barley for a couple of hours and then cook it before adding to the soup. For Wii vegans organic is not vegan.

    We have every type of barley that can be purchased other than what is fed to animals in the markets. In the US we can get whatever type of barley we would like to use but please don't use Quick barley is it is pure white and has very little nutrient value.
