I like your ordinal recipe with the egg whites much better as I like the soft bread. Not a big fan of the additives like the butter powder etc. Great recipes.

I have seen a recipe that would make a bread in a mug cooked in the microwave that might work for your son. It used chia seeds soaked in water as the egg substitute and the recipe used almond flour, though other fours could be used. I am sorry I didn't keep the link but you could probably google it.

Yes, this is the version of the recipe that I personally use the most. I did that in my original recipe from about 14 years ago. It was optional. You can add some yolks back in at the end. Can you use carton egg whites?
Yes you can, but not all carton whites will whip up enough. So make sure to read the carton to see if it says whether they will or not ❤️
