There's not many airports that have an Antonov snow blower to clear the runway - You could almost see the snow ploughs on the other runway 'not watching' 😁
I say the pilot intentionally over-crabbed to leave the centerline on takeoff so that the plane would be inclined to drift back over it as it entered the (stronger) wind gradient, so that it would pass over the centerline at the end of the runway.
It matters when it comes to pilot skill and airmanship. It also is very important should you lose an engine because the take off performance and terrain clearance starts at the end of the runway and extends upwind. If you’re slipping off the side of the runway then you’re not controlling the aircraft properly.

The pilots were very well aware that they were drifting (they would not be in charge of such big jets if they were that clumsy), but DELIBERATELY didn't go for any correctional inputs because they seen plane spotters with cameras and decided to give them a dramatic show that would make their day. Of course a big jet drifting looks real cool and not a dangerous manoeuvre although not an appropriate one for sticklers.....

There seem to be too many examples of this modern generation of pilot who look at their PFD whilst still on the runway and use it far too early.
Of course the Cathay 747 is going to start turning into the wind once the nose wheel lifts off. The United 777, it looks like on both the first and third attempt they are starting from the same point based on the tower location, not sure about the second attempt where you don't even see the tower...may have been a different runway?
Portsmouth, NH (PSM) was Pease Air Force Base and is mostly at this point an AF Refueling Wing. Also troops often go there from Europe to be further disbursed throughout the US. The airport often hosts large cargo jets simply for refueling.

This process is known as a takeoff thrust stabilization check and is a standard part of the takeoff procedure...
There is something wrong with that United 777 and two aborted take offs. The don’t even get to the point of applying take off thrust on those forts two attempts. Clearly there is an engine issue which is noticed during the initial advance of the thrust levers, before TOGA is selected. “Good afternoon ladies and gentleman, this is your Captain speaking. Our first two take off attempts failed because of engine issues, but we’re going to try a third. Wish me luck!”

This is a pretty lazy way of not dealing with the crosswind properly. He didn’t “turn” into the crosswind, the aircraft weathervaned into the crosswind and the pilot didn’t stop it. It’s bad technique.
767 training captain. It wasn’t a very good crosswind takeoff. A little aileron into wind and maintain centreline with rudder until the aircraft lifts off. Once in the air, slowly neutralize the controls and the aircraft will take up a bit of a crab. In Boeings you ignore the flight director for the first 10-15 seconds after takeoff. Once it settles, then fly it.
When you distinctly remember taking your first flight in a brand new 777, then reading that the model is 30 years old. Thanks for making me feel old.

Into wind aileron and rotate easing the aileron off on rotation.. I used to fly them.
But you’re meant to use skill to fly the extended centreline and not drift off either side due to under or over controlling.

It wasn't a rejected takeoff however the pilots were constantly checking for engine stabilization, sounds a bit weird?
If you go to the source video it says they had to return to the gate for an hour after the second time.
There were two takeoff attempts before a successful takeoff. That wasn't just engine stabilization, they had to taxi back for another attempt, twice.

He didn’t correct for the crosswinds. This is the result when you don’t correct at all.
And are you a „pilot or instructor“? You are supposed to laterally correct for wind when you are airborne, not during the takeoff roll…
