  • In this episode we chat with David McMillan, chef, author, and co-founder of the famous Joe Beef restaurant in Montreal. David left the restaurant business in 2021 and now resides and works on his small farm, Hayfield Farm, where he is re-discovering the ‘art of living’ in the countryside. In this wide-ranging and colorful conversation we explore the power of cooking with homegrown foods, how social media is hurting regional cuisine, viticulture & natural wines, traditional French food culture, and how David has found true happiness in his new life on the farm.

We farm American Bresse chicken. It is interesting to hear these stories. We are trying to this in Texas. We love those chickens. We cannot say they are French but really they are the same chickens. We are working on moving them to be finished with milk. But we sell them for much less and to normal people. So we have a while to go. They taste so much better than any chicken you would ever eat. They are so much fun too.

Great podcast. . All of this relates to the cannabis industry as well. This is how things should be done in all types of agriculture. Regenerative farming can regenerate the planet.

I have chickens that I can cuddle. I will sit on my office chair with either of my roosters. Have to get them used to you when they're very young is all. Then just persistence. They tend not to poop when being held. I've been pooped on maybe twice in three years? lol

They are dinosaurs. They will literally eat you if they need to.

You get friendly chickens if you set the brooder up correctly. I.e. so they cannot see you enter room
