Dominic Cruz went almost 10 years undefeated (since 2008). Then he was champion from 2010-2016. He is a legend and underrated. Most fighters in his situation would have retired and became an even greater myth. Valentino Shevchinko's journey is also crazy. She has dominated for 20 years, which is not easy for anybody to do. And she really only ever struggled against one other fighter. This is a hot take, but I think BJ Penn is overrated; look at his win/loss ratio...
