    Any vegetables can be used.
    1 ½ cups White vinegar
    1 ½ cups water
    2 cups sugar
    4 tsp salt

    I cannot believe that you do not have more likes for this vid. I started my "Pickle" experience with too many eggs and came to love this even more with the red beets and onions. It was difficult to wait the 3 days until ready. And when they were ready, they never lasted more than 2 days. I use cider vinegar for my pickle. I always hated radishes... until I pickled them too!

    This looks so good, love the colors and textures. I'll be making it soon. With the sweet/spicy/vinegar combo it won't last long in my house, that's for certain.
    It reminds me of the pickled watermelon rind recipe I got from Cooking With Shotgun Red. Steve's cooking for the Lord now but the channel is still active. He used black peppercorns and chili flakes for a bit of heat. My favorite tip from him was to store the jars upside down for the first few days so the veg at the top gets fully pickled.

    Made a batch the other day and they are all gone! Delicious. Just making another batch now. Sooo yummy.

      We eat all the time and they dont last long here - on the table at the moment I have jars of Beetroot, Onions, Mixed veg pickle, Garlic and a Piccalilli. Love the pickles. Best, Rik

    i have made something similar but add italian spices and a bit of dry keens mustard. There are no chilis in it. I am going to try this as there can never be enough different pickles. Thank you

    I can't do too much heat. Also, I might use less sugar so it isn't so sweet. Make it like an Italian Giardiniera.

    The most beautiful colorful pickled veggie I have seen. I love pickled veggies!! I shall try this. Question....why do you have to boil the glasses first for 10 minutes? Can I just wash them well in hot water? Dishwasher? Also, when I have pickled eggs, I leave them pickled in the fridge for 2 weeks and they are DELICIOUS! Is it the same with these veggies? thank you for this fabulous recipe. Great colors.

    Mine floated to the top of the jar and left a lot of space on the bottom. Should I cram them in more tightly?

    When the veg are in the bottles do they need to be weighted down or doesn’t it matter?
