    More than a lifetime, I have my great grandma’s which is over 100 yrs old and is like a non stick pan it is so well seasoned.

      I have my Grandmother’s nest of 3. Over 100 years old as well, factual 💗 the little one was for her favorite egg 🍳 in bacon fat.
      I inherited them from my father.
      I bought my grill pan over 40 years ago- My 30 year old Nephew has requested to inherit 💕
      He will be 4th generation to own and use👏🏻👏🏻👏🏻

    I hate the smell of seasoning cast iron, but it needs to be done so My workaround is I use my grill to season. It's outside so smoke doesn't matter! Bonus pro-tip - because of the high heat of the process I also clean my grill after the pan is cured because everything in the grill (crusties/drippies) turns to charcoal flakes and wipes right off.

      @@whatcanyado6876 I have a propane grill, preheat on medium-high about 10 minutes. I place my pan on a griddle to prevent contact between the flame and the cast iron (to avoid setting my pan on fire, since: oil+flame= 🔥 ) However, I have placed an oiled (seasoned) pan straight into a campfire with no negative issues. I'm just being cautious with my big grill really.

    I’ve been hesitant to use my cast iron skillet because of the care. Your tips are 100% the most doable and thorough that I’ve seen. I kept watching videos saying you have to season your skillet in the oven over and over again.

      That's the way the elders used to do it. My great grandmother cured her pots in her laundry cauldron over a fire, I was told. Also that there was a rhyme taught about each seasoning layer on a new pan. My grandmother told me when I was very small and she'd let me salt her pans (for cleaning. She used the same salt over and over for this same purpose.) I remember being fascinated with how very smooth/ satiny the finish of the pans were and drawing doodles in the salt. I don't think she relied on my "help" so I don't remember any other steps.

      When mine was found pretty gunked up on the ridged side and rusty on both sides, I bought a wire brush (like a grill brush) and went to work. After that, I thoroughly washed it and started the seasoning process. A small, silicone pastry/bbq brush works great for getting oil into the ridges. Happy Cooking!

    We seasoned our cast iron cooking ware once at the start of usage and up until now I have NEVER dried them on heat, just frying it with a kitchen fabric towel and afterwards rubbing a new layer of oil in...
    so far (and they have double digits) it works this way, but I sure will try the heat drying soon...
    We also found a possibly 70-100 year old cast iron (huge) casserole in our shed from our ancestors and after hours of freeing it from layers of rust and burning it in/seasoning it, this tank of a cooking item is the most durable, spacious and heat retaining thing ever. But this one is ridiculously heavy and to carry it with much food inside is a task for muscular people.

    I love my cast iron pans! I used to buy really cheap nonstick pans when my kids were growing up and just replace them all the time, and then I made the switch to cast iron and trained my family in how to deal with them. We all adapted and I'm so glad to not have that nonstick coating flaking off. Also, I found little padded handle covers that I use when I need to pick up a hot pan.

    I love this video June! i remember being 9y/o cooking out my moms cast iron - then after washing it she had me put it on the stove, turn on the heat & apply a layer of crisco oil to it while i used a paper towel to rub in the oil to ‘seal it’ as she told me. I never knew much more about cast iron than that. You know I don’t even have one today but I keep seeing it used & I think I want to get one again. Great video! 😊

    Oh man I bought a cast iron pan about a year ago but i've always been too scared to use it outside of meat and deep frying incase liquids, eggs or tomatoes un-do the seasoning i've done to it. This video is a saviour. Thanks, June!

    I am relieved that you advised to oil after washing. I have acted on the belief that you should store your cast iron skillet with a little oil film to avoid rust. I had a landlord complain that I was disgusting for not completely cleaning the skillet. I appreciate the specific advise for how the pot should look after oiling.

    I've primarily used carbon steel pans for most of my cooking because that's what my family is used to (my grandparents are from Europe and people over there use CS pans more than cast iron skillets over there) but started using cast iron after seeing so many people on UA-cam used them. I already know how to season and clean carbon steel pans so transitioning to cast iron wasn't difficult at all. I wished I invested in cast iron skillets sooner. It's better for shallow frying and baking compared to carbon steel in most cases. The best part is that cast iron tends to be cheaper than carbon steel as well. A Lodge cast iron skillet in the U.S. is $10-30 in most cases. My De Buyer carbon steel pan is usually $50+ (unless you get the smaller crepe pans or so). There are cheaper alternatives but those tend to still be more expensive than cast iron in general. The boutique/antique cast iron pieces are great as well. Got my mom a Finex and she loves it. I recently restored an old Wagner cast iron skillet and I love it more than my Lodge so far.
    While I still use my carbon steel pans more (they're lighter, easier to maneuver food with, and more convenient to use for most of the cooking I do), I think a cast iron skillet is a better all rounder that will be more accessible to most people.

    Can you do an episode on carbon steel woks? Chinese woks are probably the BEST for cooking. You can steam, bake, make omelets in them. They are essentially a minimalist cooking tool. Round bottoms verses flat... you can EVEN make dim sum in them! Delish✌️

    I usually season mine every 6-7 usages on the stove top. Last week while up at my mom's cabin I had to fix her lodge Dutch oven on the wood stove. I have cooked on it before. But never had to season a pan on it. But It worked!

    You are the one and only person who addressed the fact that seasoning DOES NOT MEAN ADDING “delicious spices” to the pan. I’m guilty of needing clarification 😬

      Originally, bacon grease or lard was used. I guess that's why it was called seasoning the pan.

    I've bought a few lately and I love my Victoria 12 in skillet. It has a longer handle and it's not as thick as some so it's lighter. The inside of the pan seems to have a smoother surface than other ones I got which is a plus for me.

    I think the term "seasoned" in this instance is similar to meaning of a person who is seasoned: it's been around a long time, and has seen many seasons throughout the years. The pan has been used many times throughout it's many seasons it's built up layer upon layer of burnt oil coatings.

    June, you lovely woman, thank you for all the information and fun.
    I want to tell you that I am an experienced and confident cook, BUT, hey waddaya know?, you've made me try more spices in my dishes. Sure enough, they are better. I never shied from ground turmeric, cayenne or cinnamon, but sparingly. I started with pimentón español (paprika.) I shall venture further. Giving you your well-earned props.

    We cook everything in ours - all nationality of cuisines - desserts - everything. We use coarse salt or a small amount of dish soap for anything that doesn't rinse off. The no soap rule was meant to prevent people from using lye-based soaps on their pans. We don't use lye in our dish soaps anymore, so it's no big deal if you rinse it out. Just don't soak them in soap or your next dish will have that taste residue.

    For anyone reading who is hesitant about the whole seasoning process & thinking it sounds like a lot of work... it's really not a frequent thing at all. It *can* be, but it's totally not necessary.
    Buy a preseasoned pan (like Lodge), and as June said, just be generous with your fat in the pan. Clean with hot lightly soapy water (or just hot water) in the sink, get a scraper to scrape off crispy bits, and only use a sponge gently. Put it back on the burner to fully dry - this is important so it doesn't rust.
    You could definitely get away with only "properly" seasoning your pan like once or twice a year. Is that how you're "supposed to" do it? Probably not, but the great thing about cast iron is that it doesn't matter. They're basically indestructible. (Just don't put it in the dishwasher.)
