You can learn fish anatomy from books and videos, but to execute it well, there's really no substitute for hands on experience, because it's all about feeling, muscle memory, etc. Practice on locally caught bream (立魚), farmed tilapia and mackerel. You'll get decent in a month if you do it everyday. Occasionally there are these tuna subspecies (frigate tuna I think) sold in Hong Kong wet markets. The quality is not good, but they are good practice for katsuo, the anatomy is identical. I guess for a video idea you can try getting Cyrus to do a sanmai-oroshi and gomai-oroshi tutorial, and have you try the same after the demostration, similar to the knife sharpening video you do a while back.
