Illustrator - Pen tool to trace over an image

Man you're pretty sick with the pen tool.. could you explain more on how you do those curve adjustments on the fly? I was trying to mimick it, but got confused (on a Mac). I'm still an amateur at it with curves and all..but only on Adobe 😏

Thanks! Hold down option to break the tangent, to make the curve go either 90 degrees or the opposite direction, AND/OR hold down spacebar if you need to adjust the overall position of the anchor point.

like in photoshop can't you have pen presure simulation for the pen tool?
