Oh, my... I never realized that a wok could be used to smoke like this... I'm gonna have to try this method for smoking with this recipe and others. Fascinating technique, which means it's an automatic add to my recipe list! Can't wait to try it!
Never would have thought about smoking with tea, fascinating! That rub also sounds amazing. I’m thinking sprinkled ontop of something like a poke bowl would be great too
Did a similar smoke recipe of James Maetin with tea rice sugar etc. Made a tinfoil tray and smoker and put it on the BBQ - it was really good, but this looks nicer with the rub and steamer stage. Will definitely try this!

My kitchen vent doesn't work good so all the colors of my cooking steams are like an abstract design on the kitchen ceiling Told my family it reflects am a good cook.
