It would grow mold and it would start decomposing very soon. If you mix it with honey right after collection, you will increase the amount of water in honey because fresh pollen is very moist. Also, you would increase the amount of microorganisms in honey. All that would lead to fermentation of honey. So you would end up with spoiled honey. There is no way to save fresh pollen for later. Eat it fresh when you collect it. Everything else has to be processed in some way so you could extend it's shelf life. Lyophilization (freeze drying) is the only way to save all nutrients and to dry it. That process is extremely expensive. So you have to settle with hot air drying.

It's true, it's not necessary to dry bee pollen. But you have to keep it frozen in a freezer. Fridge won't work, it will grow mold. Pollen is dried because it's practical for shipping and storage.

Trays have grills that are huge (1x0.5 cm). Pollen would drop trough that. I had to put some net, wire mesh or anything similar so the pollen would stay on that tray. You can buy that at a local hardware store.

Do have an idea of how long to dehydrate a smaller amount of pollen? Like a couple cups worth?
Pollen is dry enough when it's hard to crush with nails. Feels like a very tiny rock under the fingers.
