My guess would be is he was already at his limit, and after Kate goes he just has no desire to keep going or start new relationships. He feels trapped by his immortality, and he can never escape his grief. Could drive a lot of people mad after a couple hundred years of wanting to not be alive anymore. What he should have did is find himself a nice Viltrumite girl, that way he could get a few thousand years between each tragic loss at least.

When mark is sent back in time in the comics he learns time travel and alternate dimensions exist. After learning of immortals creation he should have tried to get that for himself. Imagine a viltrumite with and immortal body. That gets a strength amp on top of his already increased strength.

Immortal's biggest weakness was his bellow average inteligence. He was not even able to build up crystallized inteligence which could have been his biggest strength. But this could be just bad writing.

Mark decapitating him is no different.. such a bad plot hole, story should have continued to show mark not just decapitate him but smash his head to mush, that or simply them burying his head and his body separately far away, so there's virtually no possible way for the two to ever rejoin.
