All the training, all the lectures, all of the things he experienced and it was for nothing after 20 yrs. He thought he was the guy and he wasn't and it turned him.
Honestly though Tai Lung seemed slightly moved whenever Shifu honestly apologized. If they just gave him the blank scroll to start with and Shifu spoke honestly with him it mighta stopped right there.

Tai Lung is a poorly written character who has no well-established motive beyond "I wanna be da best and I waysn't... and that somehow turned me evil". He is definitely the most bland, boring villain in entire Kung Fu Panda franchise. Yes, you get that right - he's even more bland and boring than the villainess from KFP4. Take that. I'm not interested in "nostalgia" (whatever the hell that means for you) - showing Tai Lung again and pretending like it's the big comeback just made me facepalm. Maybe Tai Lung would be far more interesting character if the movie began with his backstory and showed it in more detail (beyond "he was evil because he was evil") and only then moved on to Po. But since it didn't (and since we never learn his backstory the way KFP2 did)... well, screw this. Part four villain rules, part one villain drools. Yeah, you drool too, mindless fanboys who wouldn't find a difference between a decent character and generic "I-don't-give-a-damn" character.
A last demo of "one often meets his destiny on the road he takes to avoid it". Po's dad wanted him to leave kung fu and take over the noodle shop by revealing his trade secret, however it turned out to be the ultimate secret for him to regain his confidence in becoming the dragon warrior.
Po only won by plot armor. Imagine only training for days and he still defeats tai lung who easily clapped the furious 5 and even shifu lol. And Tai Lung was imprisoned for 20 years now imagine his prime
