    排骨炒米粉
    材料:
    排骨1磅
    排粉3個
    辣椒仔2隻
    處理:
    1. 排骨,清水洗乾淨,擎乾水,廚紙索乾。
    2. 排骨調味:
    a. 生粉2茶匙
    b. 生抽1湯匙
    c. 鮑魚汁1湯匙
    d. 油1湯匙
    撈勻,醃15分鐘。
    3. 煲滾1鑊水,放米粉落鑊。
    4. 米粉已煮至軟身,夾起放大碗中,用蓋蓋住米粉。
    5. 預備醬汁:
    a. 蒜蓉1茶匙
    b. 蒜蓉豆豉醬1茶匙
    c. 辣椒仔,切粒
    烹調:
    1. 大火在鑊中燒熱油1湯匙。
    2. 放排骨炒香。
    3. 加入醬汁。
    4. 加入水500毫升。
    5. 滾起,攪勻。
    6. 轉中慢火,加入糖半茶匙,冚蓋炆10分鐘。
    7. 另一邊鑊,加入油1湯匙,中火燒熱。
    8. 放米粉,轉中慢火,煎1分鐘至金黃色,反轉另一面,再煎1分鐘至金黃色。當兩面都煎至金黃色,轉大火,快煎至乾身及脆口。
    9. 放米粉上碟。
    10. 預備生粉芡,倒入排骨湯內收汁,熄火。
    11. 倒排骨汁在米粉上,完成,上碟,可享用。
    Stir fried rice sticks with pork ribs
    Ingredients:
    Pick ribs 1 lb
    Fried rice sticks 3 Nos.
    Chili 2 Nos.
    Preparation:
    1. Pork ribs, rinse with tap water. Hang dry. Dry with kitchen towel.
    2. Season the pork:
    a. Tapioca starch 2 tsp
    b. Light soya sauce 1 tbsp
    c. Abalone sauce 1 tbsp
    d. Oil 1 tbsp
    Mix well. Season for 15 minutes.
    3. Boil up a wok of water. Put rice stick.
    4. Rice sticks have been softly soaked. Put it in a big bowl. Cover it up.
    5. Prepare the sauce:
    a. Garlic sauce 1 tsp
    b. Black bean garlic sauce 1 tsp
    c. Chili, get it diced.
    Steps:
    1. Heat up oil 1 tbsp at high flame in wok.
    2. Fry pork ribs well.
    3. Put the sauce.
    4. Add water 500ml.
    5. Stir well when it boils up.
    6. Turn to medium~low flame, put sugar 0.5 tsp, cover up the wok, braise for 10 minutes.
    7. In the other wok, heat up oil 1 tbsp at high flame.
    8. Put rice sticks, turn to medium~low flame, fry for a minute until it turns into golden yellow. When 2 sides have been turned into golden yellow, turn to high flame, fry until it is crispy.
    9. Put rice vermicelli on plate.
    10. Prepare tapioca sauce, pour into pork ribs soup until the sauce becomes thick. Turn off fire.
    11. Pour the sauce on top of rice vermicelli. Complete. Put on plate. Serve.

      Fried rice sticks 3 Nos.
      Chili 2 Nos.
      Preparation:
      1. Pork ribs, rinse with tap water. Hang dry. Dry with kitchen towel.
      2. Season the pork:
