I’m trying to unlock my phone from AT&T, & do a free trail and/or maybe move to Visible wireless. I will be keeping my same cell phone though. After the erase all contents, when I switch carriers will I sign back into my iPhone & have everything from the iCloud back on? Mostly care about my Notes & Photos, & contacts.

It won’t directly delete any data from your iPhone or other devices connected to the same iCloud account. However, if you have iCloud Backup enabled, your iPad's data is backed up to iCloud, and it will be removed from iCloud if you choose to erase it.
