Here is probably the easiest way to make the best bagels. YOU MUST USE HIGH-GLUTEN FLOUR and precisely measure the ingredients, which is really easy using a GRAM scale. Comment for any questions!

12 BAGELS (overnight recipe)
1,135 GRAMS - FLOUR
4.5 GRAMS - YEAST
680.2 GRAMS - WATER
25 GRAMS - SALT
10.5 GRAMS - MALT
142 GRAMS - MALT (PER 5 GALLONS FOR BOILING)
Add the water (105-110 degrees), salt, and malt syrup to the mixer and then add the flower and yeast
Mix on low speed with dough hook for 2-4 minutes and on medium speed for 2-4 minutes
Divide the dough into 142-gram pieces
Form the dough by putting pressure on the sides with circular motions, creating the dough shape
Gently push a hole in the center and expand to roughly 2 inches
Place bagels on cornmeal, cover with plastic, and let the bagels sit overnight in the refrigerator
Boil water and take out bagels to rest at room temperature (10-20 mins)
Add bagels to boiling malt-water, stir bagels to keep them from sticking together (they will boil for approximately 1 minute)
Place bagels on a screen to remove excess water, add garnish while still wet
Transfer bagels on a sheet pan on top of parchment paper
Bake at 500 degrees for 15-20 mins
