Making Beef Jerky on a Weber Smokey Mountain

Beef - 6 LBS Eye Round Choice Angus (fat removed, 1/4" thick strips cut with grain)
My Sweet & Spicy Jerky Recipe (simmer 10 minutes, let cool then marinade in fridge 8-9 hours):
1T black pepper
1T chili powder
1T garlic powder
1T onion powder
1T cayenne pepper
1T red pepper chili flakes
1T salt (optional)
1C soy sauce
2C water
1/2C worcestershire sauce
1/4C franks red hot sauce
1/2C honey (up to 1C if you like more sweet)
Directions:
Only fill chimney 1/2 way
Fill smoker with charcoal (lump charcoal has no fillers)
Hot coals on top of charcoal (minion method)
Full water pan...absorbs a ton of energy (heat) before giving it off
5 chunks cherry wood (3 first hour, 2 second hour, flip at 30 minutes intervals)
Maintain 165-180 degrees (aiming 175 degrees)
Place beef directly on clean grates, keeping away from edges
Must Not peek, keep lid closed! Otherwise you Will struggle with temps
6-7 hours

Thanks for the video. I'm going to attempt mine in a Masterbuilt smoker but this definitely helped with seeing how to cut the beef. Seasoning looks real good too!
Thin slices were key, and being consistent helped. Try not to blast them with smoke more than two/three hours, or they may get a bitter taste. Thanks bud. As always, thanks for watching and commenting.
Thank you for taking the time to make and share this video. A comment and a question. First of all, your recipe was off the hook awesome. It's a great basic recipe which is great exactly how it is. To make pepper jerky, I simply sprinkled pepper on it before I smoked it. I have a Bradley Smoker and it worked great on that too. Secondly, my question is, how the heck were you able to get a membership to Restaurant Depot? That really is an amazing price for your Eye of Round. I paid 26 bucks for 4 pounds of meat at Sam's Club. You paid less and got more...

I generally use London Broil when making beef jerky and it works really well also.
