  • For the love of food Podcast: rootsandrefuge...
Hey ya'll, I'm Jess from Roots & Refuge Farm
Welcome to a place that feels like home. A small farm with a big family. We hope you'll pull up a chair, grab some coffee and visit awhile.
There was a time that all I wanted in the world was a little farm where I could raise my family and grow our food. Now, that is exactly what exists outside my door. In watching it unfold, a new dream was formed in my heart - to share this beautiful life with others and teach them the lessons we've learned along the way. Welcome to our journey, friend. I am so glad you're here.

I've always had gardens. Yes I had to buy from the store as well. Now, I only buy flour, sugar, salt, yeast..some meats ..paper & laundry products from the store.
When people were seeing shortages..we shopped our pantries. Thank you Granny for all your teachings.

Slow roasted goose is so good and easy, it doesn't matter how old they are. The plucking is the hard part, you need to make sure that they are not molting or it's nearly impossible to properly pluck them. Same with ducks. And pan fried skin on goose or duck breast is sooo delicious.

Having been married going on 54 years this August, the love I see between you and Miah, is an unconditional love that deepens in each passing year. May the Lord bless you and keep you. May the Lord cause His face to shine upon you and be gracious to you, may the Lord lift His countenance toward you and give you peace. Numbers 6:24-26 ❤️✝️🙏

I never thought in a million years that I would be raising ( Peking) ducks. It happened a few years ago. Just before Easter. I had gotten a few baby chicks & these little yellow ducks would have to stay at the farm store all weekend all alone. I brought them home. Those ducklings grew into Peking ducks. I now have a male, named Cheddar & the female is Quackers. They are fun to watch . 😊

My husband and I have been doing mainly carnivore for about a year. We have lost around 90 lbs combined. But I miss veg! I have added in some here and there and I have found certain ones that I just need to avoid. It is very eye opening to find certain “healthy” things that just don’t agree with your body. So happy you are healing your body with carnivore. It is certainly a debated way of eating. ❤️

We have ducks. If you cook the older ones in a slow cooker on a bed of potatoes, it comes out incredibly tender. I put citrus in the cavity for extra juiciness. Then, before serving, I pop in under the broiler to crisp up the skin. Highly recommend.

Dear Jess. This morning I preserved some winter squash from last years garden and listened to your podcast "what is a homesteader". The hole podcast was so emotional and when you said that I can be proud of me there come some tears and it touched my heart deeply. Last year was my first real garden year and even today I have some winter squash in our root cellar. I just realized that I managed to turn my waiting room into a classroom, as you always say so beautifully. Up until now my aunt has always given me vegetables from the garden. This time it's the first time that I bring her some winter squash. I am very happy that I can give her something in back.
This is amazing and I have to thanks you so much for all this inspiration and motivation that you give to us. Also the podcast "for the love of food" touched my heart so much when I heard it last time while I separated my little seedlings for this years garden. It is so a blessing to have you. Apropos Miss "Fräulein" is so cute and she reminds me on the baby cows that my grandfather had back when I was little. I wish you and your family all the best and send you many love from Switzerland.

Back in the day we never fed our milk cows grain at milking time. We gave them silage and they had plenty of milk production. You might want to look into that as you could raise your own corn and produce your own silage. You would need a silo to store it so Miah would have to get to work on that!!!!!!

Hey Jess, a French chef I worked for would pour a small/medium mound of salt for each beet and sit the beet in it and roast them in the oven. Use something long and thin to test for doneness, when one let cool and with gloved hands, pull the skin off. They are wonderful cooked this way! (And it’s probably how they were cooked for that salad!)

Between your health scare and the new businesses, it's easy to understand the timing wasn't right but was just curious about how things were evolving on those fronts...

If you possibly can, feed the sheep hay in the morning before turning them out onto pasture during early grass growth. This helps their rumens adjust to sugary, fresh grass during early spring. The roughage helps them digest and prevents bloat, scouring and other issues.
I know you have a lot of livestock experience but with sheep finding a great mentor you can turn to is a must! Good luck with your lovely ewes.

Two things I would like to see you address in future videos: how is the compost doing? I would like to see updates on the breakdown; if you have used it; how additional efforts have gone. The second thing is fertilizing your garden. I add compost every fall/spring to my garden and some amendments but you speak about fertilizing and I need to SEE what you do and what different fertilizers you use. I use compost tea with molasses but I don't know if I should be fertilizing things like onions; peppers; carrots, etc. Thank you for all I've learned from you. I live vicariously through your livestock...former farm girl; now a city dweller.

I noticed the goose egg out in between the nests. I’ve watched hens push eggs out of their nests. I always wondered why they did that. My Uncle use to sit and watch the chickens, sometimes I had time to go sit with him and he would tell me all about their different personalities and the pecking order. We all lived in one big yard on 6 acres. Two houses and sometimes 4 mobile homes. Sunday dinner was the best up at Mom’s house. She took pride in her Sunday pot roast or pork roast stuffed with toes of garlic and sliced thin so everyone could have seconds. Always with her baked macaroni and mashed potatoes. Then a big poker game after, with the Saints game on tv. Memories…. 😌 Have fun Ben! I hope yall won!!! ⚾️

our 4 month old pilgrim gander caught a hawk by the neck. The hawk was sitting on one of our 4 month old chicks with its talons holding on. That gander squawked so loud and strangely that my daughter ran out to the run and disengaged the hawk from the chick. The chick was not injured, the gander let go of the hawk once my daughter had a hold of it. It was truly amazing.

You could use a pecorino Romano or a finely grated park on top of the salad to replace the salt cured eggs!
