- 2-3/4 c. Cake flour
1 tsp baking powder
1/2 tsp baking soda
1-3/4 c. sugar
2 sticks softened butter
1/4 tsp salt
4 eggs separated
1c. Coconut cream
1 c. Butter milk
1 tsp vanilla extract
1/2 tsp coconut extract
1/2 c. Coconut flakes
1/2 c. Pastry cream (optional)
FROSTING;
2 c. Confectioners sugar
2-8oz pkg softened cream cheese
1/2 stick softened butter
1/2 c. pastry cream (optional)
1/2 c. Coconut cream
1 tsp vanilla extract
1/2 tsp coconut extract
Sprinkle top with coconut flakes

Hey Auntie Chris! So my mother used to make a coconut pineapple cake with Crushed pineapple in the icing! It was GOOD’T! If I wanted to attempt to make it that way, would I just cook down the crushed pineapple like she used to and fold it into the icing? I’m asking because she didn’t make her icing like you so I want to be sure as to not mess up the icing. Do I let the pineapples cool after cooking them down? Sorry for the LONG comment, but I gotta know! 😬. Love you! Mean it!

One of my mom's (RIP) favorite desserts. Love how your cake turned out Ms. Chris. I'm going to try that technique with the egg whites. Normally I don't separate the yolks from the whites when making my scratch cakes but I see your cake was very fluffy and moist. Another fabulous recipe. Thanks for all you do :)

Rather use fresh coconut than the shelf flakes. makes a big difference
That was me as a child but as a I got older, the coconut flakes grew on me

@@MsOmazin And the thing is to me it’s not even coconut cake it’s just on the top with the cake itself it’s not even coconut flavor but yes I was never a fan of coconut shavings but I do love coconut flavor
If you use a serated knife, instead of a Chef's knife, to cut your cake, the slices will look smoother when you lay them on a plate to serve.
