I love when you remind people that the food doesn't have to look perfect. My dad always says Im about to chew it and make it really ugly so plate up! Lol
Love your dad!
I learned canning chicken, beef and pork butt from your channel ! also everything else i can! thank you from a 71 year old michigander male canner !
♥️♥️
I make them, but slightly different. Same meat only, but I add dehydrated microgreens for added nutrition. I roll them thin, but long like sausage before baking. When added to a wide mouth jar, 6 fit in each. They fill the jar and they fit great on a sandwich as meatball subs, add sauce, mushrooms and cheese, OMG.
That sounds like a great idea on the different size/shape. I will have to try that! Thanks
Just wanted to share: the HAMBURGER locally is $5.99 on sale! 80/20! However, chuck roasts are on sale for $3.99. I have a meat grinder attachment for my kitchenaid. For two dollar a pound savings I can put in a little effort. Plus, chuck is what is cut up for stew meat anyway so I can can up some hamburger, some meatballs, some beef and save a lot. Quick note; make friends with the staff cuz they can tell you when the meat is marked down nearing the sell by date. Save even more because you either immediately freeze or process !
Awesome tip
Yep! I do the same. Not only is it usually cheaper. In some ways it's even better to buy the chuck roasts, since you can while cutting up the roasts, choose how much fat you want in your ground beef, stew meat or whatever you make out of it. ☺
I have both a meat grinder for my kitchenaid, and also 2 #10 large cast iron hand cranked meat grinders, which I haven't used for quite a few years.
I started out using those when my children were babies, since there was no way I could afford buying an electric meat grinder. I've hauled those old heavy grinders with me wherever we've moved, along with other non electrical and heavy "tools". Never know when I'll need them again. Better to have them than regret not keeping them when/if I need them...
When the pink slime was exposed several years ago I bought a meat grinder and grind my own beef, pork and poultry!
Every time I have been in the grocery store buying whole beef brisket for 2.99 a lb someone in line has commented on I must be hosting a big barbecue. I always share with them that I am taking this home to grind into hamburger. I am saving a fortune. Thanks to Leisa even when my freezer is full I know how to still take advantage of this price.
And you can trim the fat off as much as you want!
My favorite line..."My heater has been canning up." Love this idea!
I heard that, too! I am the kind of person who says "Salt and Shecker Papers"! LOL
Canning hamburgers are really great too. If you use a jar ring to form them they come out just about the right size to jar. Do the thumb in the middle thing because they puff when you cook them.
I hope she does a video on that.
@@richardpohwat7018 When I did it several years back I added onion soup mix to the beef like I do when making them fresh and instead of water I used beef broth for the liquid. They turned out great. I'd be curious to know Lisa's take on the onion soup mix since it's technically not just a spice but has minute amounts of other things in it as well such as a relatively small amount of corn starch. I figured that since it was all cooked into the burger prior to canning that it would be ok. Can't say how they would do long long term because they were too good and I ate them all within about 3 months. LOL
One of the Canuary contributors showed patties as Salisbury steaks in the jar (wide mouth). I think she got 4 to a jar. Check #Canuary
Want thank you for giving me confidence to try canning… I just ordered another canner. I ordered an all American. I’ve had a couple- never use them and then sold them… I plan to can hamburger meatballs, and corn. Those are the things. My husband really likes and I’m fortunate that I live in a community where they can teach me how to prepare my canner
You've got this!
I like canning fluid things like stocks and soups in regular mouth and chunky things like meatballs or potatoes in wide mouth
Another great recipe and lesson 👩🍳 With all the things we can - can safety (so many recipes) I will never understand the need to do things that are not approved or attempt to do things that a commercial kitchen does. Take Good Care 🥂
Thanks for watching
I made these a few months ago. Great idea. I used some mushroom and onion powder. Next time I want to try tomato juice instead of water since everyone here likes spaghetti and meatballs. Thank you so much!
You're very welcome
Every time I find ground turkey or chicken, I mix up ground pork or hamburger with it for meatballs. I mix in whatever spices. I bake them about 20 minutes, can them about 10 to a pint. I fill the jars with tomato juice or spagetti sauce over the meatballs.... pc for 75 minutes. I do some quarts ...but pints make enough for a meal. Mini cupcake pans are the perfect size for holding my meatballs in the oven.
I never thought of adding powders to the meatballs (and sauce). I usually add chopped onions, peppers and mushrooms. This way, I can still safely get the flavors. Thank you!
I hand roll my meatballs fairly small and can usually fit 11 in a pint and I use broth, any kind of broth, if I don't have broth I use water and onion soup mix. They turn out amazing!! I have also done them in my homemade bbq sauce or marinara, also AMAZING. Such a great convenience food.
Sounds great!
Seeing this reminds me that I need to restock my meatballs as well. Definitely handy to have 😊
I can these for putting on top of pizza. My son loves them.
Us, too! I use Walmarts Italian loaf ($1, here) to make pizza bread.
I done some research and found that in place of some type of grain to hold the meatballs together you can use boiled potatoes - 1 large potato per 2 lbs of meat. After the potatoes are boiled, mash it up - without butter or milk - and use it to mix with the meat. The starch in the potatoes will help bind the meat together. if you want the potatoes to be a bit creamer you can use a little bit of broth to get them to spread out more. Also using fresh onions or peppers will effect the binding - use dehydrated ones and the balls will not fall apart. - FYI If I am wrong, Master Canners please let me know if this is not safe.
The meat binds without it. I don't understand why no one believes me when I show it on camera 😅
"Everybody's in the hot tub" 🤣🤣🤣
I canned meatballs ( who knew?) after watching your previous video. And, yes, I canned some in pasta sauce and some in broth. So I can have either spaghetti 🍝 or meatballs over noodles 🍜 (I make a gravy using the broth and throw in some mushrooms 🍄, also canned, and onions 🌰. ) So good. Thanks for sharing.
Wonderful!
I tried this but made mine a lot smaller and used a home made tomato sauce. Tried it as a pizza topping or meatball subs which is my husband's favorite. Yeah life is great when there's something already put together. Thanks Leisa love your videos
I flattened my meatballs cooked them in the skillet and fit six of them in a 12 oz jar.
I have also made small meatballs and used short 8oz jars. 🙃
I'll put those on my 24 canning list. I love canning!
Me too!
The only reason I will only use wide mouth jars for any kind of meat is the cleaning factor. Those darn proteins that like to stick to the inside of the jars are so hard to clean if you’re old and arthritic like me.
Otherwise any jar will do!
I saw a post on one of her other vids that the person uses an unused so clean toilet brush to scrub her jars; much more durable and scrubbing power than a bottle brush.
I have started using (new unused) round toilet brush for cleaning my jars. It is the perfect shape and size and the bristles are hard and clean very well
Me too. 😊@@lauriedavis329
@@randyweber6576 that might be worth a try, thank you…experiment incoming!🤪
I’m Italian so particular about my meatballs but they do look nice in the jars. Great instructions.
How funny we just had meatballs I had previously made for dinner tonight! I watched your previous video at least a dozen times! I made them for us first, then canned half pints for easy protein for my grandma who eats soft foods only. I think adding powdered dehydrated mushrooms was still the best canning recipe tip I’ve ever heard. What a huge flavor boost 🤤. I also blend up onion and garlic in there. So good!
That is awesome!
I have canned so many quarts of meatballs which you inspired the last time. I used a quart last night with a quart of hot Italian sausage with pasta sauce and spaghetti. It was fantastic. I have a unique way to cook the meatballs that makes it quick, easy and hardly any grease. I toss the meatballs in boiling water. It only takes about a minute until they are firm. In my opinion it comes out much better than cooking in the oven. The texture is way better.
Great tip!
Crazy thing, I'm allergic to meat, but love to learn this in case I can help someone else. Thanks!
Any time!
Just in case you are interested, my allergist said there are now treatments for that if it’s an acquired allergy from the lone star tick. I have lots of allergies so I know they can be a pain to work around all the time so I hope yours is treatable if you want it to be.
@@jinga2535 It seems to be. I've head of others getting over this allergy, but this began in the 1970's, so not sure if the long haul makes a difference
@@nancywest1926 I sure don’t know if it’s treatable if it was that long ago but my allergist said if the person stays away from red meat it has a better chance of being curable. It was just a side conversation so I don’t really know too much about it.
@@jinga2535 I don't know either. All I know is I'm cheaper to.feed these days without meat 😃
Leisa have you canned hamburger patties? I made some out of lean ground beef, thicker and taller instead of thin and wide, I just tried putting them in wide mouth jars and they fit perfectly. I have canned loose ground beef, all kinds of chicken pieces and pork and even sausage patties and all turned out wonderfully. The canned hamburger patties just sound like a great addition to our pantry for my family and I. And by the way I am going to can meatballs like this, maybe by tomorrow since we got a load of hamburger meat from a wonderful local cattle farmer who decided to start a store from his butchered cattle!!
Looks so yummy!! 🤤
Can't wait to put some on my show Thank you Lisa
Awesome!
Love this recipe , THANK YOU LEISA
Awesome job thanks for sharing ❤
Hi, Leisa! Thank you for sharing! 😊
Looks SO yummy
Thank you for sharing this 😊 I now know what I’ll be doing tomorrow .
Love this thanks for letting everyone know the safety canning process I love canning meatballs!!
Looking good!!❤❤❤
Thank you!!
Thanks. All kinds of ideas in my head other than spaghetti like soup and stuff!
Love it…will try. 👍💕🙋🏻♀️
Hope you enjoy
My son who (loves meatballs) walked in while I had this on. Looks like I just got volunteered for meatballs. 🥴
🤣🤣
Thank you Leisa for another great canning video❤️
You are so welcome!
Another great Idea! Thanks,Leisa❤
You are so welcome!
I look forward to all your videos. I’m going to try these this weekend. 😊
Have fun!
Hi Leisa, how wonderful to have seen you so many times this week. The best meatballs I ever made were beef and pork in Swedish meatballs. It called for cardamom but I live in the boonies and can't find it anywhere. Ginger is the best alternative.
LOL I love adding green powder to things! I kind of have to because my Mr. Picky won't touch them so it's hidden often and he has no clue lol! These will be a great addition to our pantry!
Our Halfacre Homestead calls it all "parsley" to trick her husband 😅
@@JazzyMamaInAK I love it lol!
Awesome! Definitely doing this. I am guilty coming home from a long day and ordering a pizza😬 this will definitely change it up in the pantry!
I would add onions and peppers because that is one of my staples for cooking. This looks awesome.
Leisa, not sure your way of eating, but anyone KETO I eat spaghetti sauce and use raw cole slaw cabbage for my "noodles". Cheap, and satisfy my cravings for noodles (lol) hope this helps someone. Will definatly can and make your meatballs, sauce over cabbage! Thank you!
Great tip!
Mind blown 😂, I would have bet they would have fallen apart. Thanks for showing another safe addition to the pantry!
Thanks for watching!
Adding meatballs to my to do list.
Oh, Leisa! You're hatching chicks and I bought some from my local farm store. I have 8 Easter Eggers. I've had them for about 4 days and they have nearly tripled in size.
That is awesome!
I make ground turkey and can it. All good!
I always have siphoning
I add powdered mushrooms!
Where is my ring JANET 😂😂😂
🤣🤣🤣
I'm surprised that the density issue with canning certain meats isn't an issue with the meatballs. Since I know I can safely can onions, garlic, peppers etc, I would add those to my meat mixture as well as seasonings. I make my own marinara sauce and I'm going to do these using my sauce. I am looking forward to this! Thanks for sharing
It's the same as hot packing meat, there is no density issue
I can chicken meatballs; I use a spicy chicken meatball recipe that I found online and wow are those meatballs good! I prefer them to the beef since the beef seems to have a weird texture/flavor after canning.
I just got my forjar lids yea
Awesome
My husband seen the jars and said no way for the hamburger ,I made sloppy joes this week he said they were good .Then I told him that’s the hamburger you wouldn’t eat that I caned .Thank you now I’m going to make meatballs .
That is awesome!
For the whiny/picky eaters, it is LEFTOVERS on the shelf. 😊
Sharing the laugh 🤣 I had at my own “southerner” self. I heard use “Ratilin” ground beef; thought it was a type that I was not aware of.
I checked the transcript to get spelling to research and found it was “rather lean” beef. 😂😂
🤣🤣
FAR OUT!NOTHER GREAT VIDEO!
Glad you enjoyed it!
I got chicken quarters today for.99 a pound. Canning ugly chicken for the first time this weekend!
♥️♥️♥️♥️
Wow! That's an amazing price. On sale here in the PNW, they cost over $4lb!! 🤯
You will love it!
Are you going to remove the bone, or can it bone-in?
"Canning the heater" 😂 I love it. I'm not the only one. Great video. Do your dehydrated vegetables have to be ground up?
Yes, it's best. They need to be super small
I hav a 1T, 2T,&3T Cookie Scoop Set. I am going to use the 1T scoop to do this. More/smaller meatballs, but less liquid. I may use 750ml/1-1/2pt as well as 500ml/1pt wide mouth canning jars. I will add 1/4t BTB per pt. BTW, I missed how long you processed them. Nice video - as always!
75 pints, 90 quarts
@@SuttonsDaze ???
The rest of the world uses the metric system where 500ml = ~1pt, 750ml = ~1-1/2pts. Lol !!!
@@paulwilliams200 you asked how long to process. 75 min for pints, 90 min for quarts
Thank you will be doing this for sure. And also, ground beef has to be thoroughly cooked first before putting in jars correct?
Medium, nit well
Leisa, because I trust you is it safe to can a regular beef brisket.
Absolutely
I canned some meatballs, then used youre recipe for Swedish meatballs. A big hit in my house… thanks Leisa
😅😅😅 " the heater is canning up" 😊
Been re-watching your video & wanted to know if you can heat up the leftover broth and can it would it be safe or just a waste of time? I don’t make much gravy. Thank you for being you we are all very fortunate to have you in our lives & keeping us safe
You would have to empty multiple jars of meatballs to make it worth it
If you eat Ramen, use that stock for it. Or mashed potato flakes. Or rice, or noodles. 😊
Got a friend, he gets ugly chicken with a LOT of stock, and the pint makes 1 meal, quart for 2.
Thank you so much for this! So…just checking. Meat with seasonings (salt, pepper, dried herbs) are okay, and so too are dried/dehydrated onions, garlic, greens etc? Thanks for helping us all!
Yes and thank you
Leisa
Could you add beef bullion cubes or better than bullion to add more flavor to the jars when filling the jars, To cteate more of a beef flavor?
Absolutely
Hi Leisa, I have a question? Can I use the Knorr vegetable dry packet to the meatballs? I use that in my meatloaf and we love it?
If the ingredients don't have dairy or starches
What about adding onion flakes, garlic flakes or parsley flakes to the meatballs ?
That's fine
@suttons daze You mentioned that we could use pasta sauce. Can I use pasta sauce that I've previously canned... or do I need to use freshly made pasta sauce? Thank You.
Either or
Canyou tell me where you got those cool cooling racks??
I made them

Can I use like a Hunt's tomato juice. I dont have honemade sauce or juice.
Absolutely
Can you add granulated or powdered onion and garic, salt or pepper
Yes
hello sgtsy
How about ground venison? Mixed with other ground meats.
Absolutely
Beautiful! May i ask, what causes the siphoning?

Wonderful explanation! Thank you for your great, educational videos!❤
I'd like to do this with my mom's Italian meatball recipe. I know I'll have to omit the bread, but she also adds an egg to the mixture. Would that be no-go also?
No egg
What temp & how long do u bake the meatballs ?
I did 375 until they are cooked medium, not well.
What temperature did you bake at and for approximately how long. Thank-you.
375 until they were cooked medium
@@SuttonsDaze Thanks again for all your help.
I like to cook my meatballs, from raw, in a spaghetti sauce so they come out moist and tender, rather than pan fry or brown them in the oven. Is that an OK way to prepare them before putting the meatballs into the jars for canning? Thanks for everything you do and share with us! 👍🏻👍🏻
Yes
@@SuttonsDaze awesome, thank you for the speedy reply!
Question... I usually put an egg per pound of meat in my meatballs. Is that ok as it is protein?
Nope
Hi LEISA! How long were these baked before canning?
Until they were cooked about medium
what about frozen turkey meatballs to dehydrate
Dehydrated meat is not shelf stable
Please tell me again the name of the company with dehydrated veggies you use.

Leisa I am looking for a gas cooktop for canning. What brand is yours?
amzn.to/3QYp4Yt
How long were they in the pressure canner?
75 min for pints, 90 for quarts
ok, so here is a weird question. I love Sam's meatballs and I have quite a few in my freezer. Now we have become worried about power outages and I would love to get things out of my freezer and can instead. Is that a possibility?
Nope, mentioned that in the video
No, read the ingredient list on the bag, contains flour, dairy. Meat and spices only for safe canning.
I add mushroom powder to mine.
I've done that too
Wy not dried onions and muschroomspouder? you justed to have that in the meatballs.
Add what you want as far as dried spices or powdered veggies
I have used my mushroom powder and it is great. I did get just a touch too much but that still works. Go for it!
Can you add chopped onions & minced garlic ?

Can I add egg for binder?
