The wild blackberry season is coming to an end. We’ve put enough blackberries into the freezer so now it’s time to put some in jars. Normally blackberries are canned in a sugar syrup but when you’re eating KETO, sugar is not an option. This recipes shows that you CAN preserve blackberries without sugar.

I have 15 Apache and 15 Arapaho blackberries bushes. We have harvested 20 GALLONS of berries so far. We will probably get 4-6 more gallons. I'm extremely happy with these plants. I planted them in spring of 2023.
Hopefully that will be us next year! We planted 12 blackberry and 12 raspberry plants this spring!

I have canned blueberries in water for years. We use these in smoothies, water and all. One half-pint jar is perfect.
I haven't even watched it yet and I had to say, I'm here for any sugar free/keto friendly canning tips! OK, now I'll watch, lol

Thank you so much for this video. I grow strawberries, raspberries, tay berries, blueberries and thornless black berries. It takes all of a seven cubic feet freezer. I am also on a keto diet and this will certainly help me preserve my berries in a keto friendly way and free up more freezer space.

Great tip for using empty jars to fill the empty space. Have you tried a steam canner? Game changer!!
That’s what I’ve always used. And now I’ve been doing oven canning since it’s just my husband and me.
@@rangerswife2176 very interesting! The steam canner is usda approved for those not wanting to deviate from the rules, but I've heard of rebel oven canning too!

What a timely video! We have gallons of wild blackberries in our freezer and I am Carnivore, but I do eat berries. This will be a perfect solution! Note: I did just can some blackberry jam using Allulose and it turned out amazing, I've gone through one jar already. I like a little in some full-fat yogurt, or Carnivore ice cream. Thanks for the info!

If I was lucky enough to have a freeze dryer. I would freeze dry them.
My parents planted 6 tame blackberry plants several years ago, spaced about 2-3 feet apart. They trained them onto a trellis. Each year they pruned the old canes. I believe it was year 2 that they harvested approximately 26 gallons. No briars and chiggers and snakes. I could not tell any taste difference between their tame vs wild blackberries. Supplied the family and sold a bunch each year. Just FYI.

GREAT VIDEO. Canning fruit is a challenge when on a Keto lifestyle. Blackberries are so fragile and so tart.
The Navajo thornless are delicious when picked ripe!! I only have one bush in mid-East Georgia and it's growing new branches and new berries in it's third year. I sure plan to plant a lot more.❤

I just finished canning my berries from the thornless bushes I planted 5 yrs ago when I stared my homestead. No sugar, just like you.
My Mom and Grandma canned blackberries in water for years. Some with sugar , some without. I loved them both ways. So good. I'm so glad you shared that is still considered safe to can them without sugar. We sure all survived.

I know an older man who told me that his mom used to can berries in plain water in the summer. Then in the fall when she had money for sugar, she would open them up and make jams and sweeten them for pies. Work with what you have!

Loved your video! I just freeze my blackberries! I rinse them with cold water and let them dry before freezing.
I canned 14 pints of Fresh, Homegrown, Blackberry Jam today. Many of them will be added into Homegrown/Homemade food baskets for Christmas presents. I'm also making pot holders, cheese and butter to include in the baskets.
thank you so much for what you do. I have been using vinegar in my new canners that I use for the last 25 years and the vinegar has kept my canners as bright inside as the day I bought them. They don't look black like they sometimes start to look. Just something I thought wood be a good tip for people. Thank you again for all you do.

THANK you for this! I’m also trying not to eat sugar because of its highly significant role in getting cancer. Right now, I have my berries in the freezer, but if (when) SHTF, I won’t have a cold freezer. Thank you!
I cook mine to juice it, then I mill it.
I freeze dry it. Add enough water to keep it somewhat thin juice so you can powder it.
I use my grape juice to can fruits. Blackberries I juice some of the fruits and can that for syrup later. Some of the berry juice is also used in my canning for my blackberries. Makes really yummy juice even after consuming the fruit being canned. Have done apples, pears, prunes, and cherries. I put the fruit in then pour the grape juice right from the steam juicer to fill my jars.
Just a suggestion I as well followed your example and started a ketogenic lifestyle back in December anyway I sacrifice one quart of berries for a gallon of berries i process the one quart into juice as you would for jelly I use that juice in canning the gallon of berries in place of water

I've been harvesting a gallon+ of wild blackberries every other day for the past 2 weeks. We've made cobbler 4 times and I've put 6 gallons in the freezer. I'll probably get at least another 4 gallons before they are done. Last 2 years we were in drought and didn't get many berries.

Very thorough Sarah! I have not done water yet, but certainly have done ultra light. I enjoyed them but it took a bit for some of the family to warm up to them. I was surprised that they did not fall apart during the heating. Good video.

Yummy! I never really thought about it until today that berries were almost always in the freezer. Except for jam. My mom would can most of our fruits, usually with light or medium syrup. I'd like to see some of your recipes for using water packed berries!

I’ve heard that when you need a stabilizer jar or two to put in filtered water. Once processed, you have sterilized water for wound care.

Thank you for this video. I am pre-diabetic so watching the sugar. Can you show us the consistency of the berries and how you use them.
Next time you pick the berries try a small variation to get the best berries. Cup your hand under the berries and gently tap the berry the ripe ones will fall off; you will end up with the sweetest berries. My kids used to eat the frozen berries without wanting sugar on them because of all the natural sugar.

I rarely can any more because I have to buy my produce at the grocery store & it’s usually too expensive but I still have all my supplies “just in case.” One note, don’t know if it’s true or not, but my mother always “conditioned” the lids by putting them in a small pot of warm water, just at a low simmer, for several minutes before using them. She said that softened the rubber seal just a little which gives a better seal. I only know she rarely had a jar that didn’t seal properly and I watched (& helped) her can countless thousands of jars of fruit, jams & jellies over the years.
That method is no longer necessary with the current types of lids being sold.

I'm hoping to do this with the Wild Black raspberries I found in my son's backyard! I never even knew they were a thing until I saw them and mistook them for blackberries. But surprise surprise!
Those are called blackcaps and are a delicacy. There is absolutely nothing like their flavor! They are pungent, deep and intense flavor. Consider yourself blessed to have them!

Hi , I have your version of the Ball canning book and the ‘new’ one. I was excited to get it as a Mother’s day gift. That said I was very disappointed in the book. Keep your old book. Ball has strayed from the main reason for the book. It is another cookbook with weird recipes.

I always put a rack or thicker dishrag in the bottom of the pot if i am not using my regular sized boiling bath pot which has a rack to use with it. Just to insure the heat or bumping around a bit while boiling doesnt break my jars.
Good advice! I don’t use any barriers in any of my canning pots and haven’t ever had a problem, but I do know many people do use a barrier.
@LivingTraditionsHomestead d on't know if it's my electric range...but all the pots I water bath in are pretty thin on the bottom...and that scares me a bit, so I take that precaution.
