  • Mullah bathathis is South Sudanese/Sudanese potato stew cooked with meat (beef, lamb or goat), lots of onions, tomatoes and/or tomato paste, garlic & a blend of spices.
    INGREDIENTS LIST:
    1 kg beef (curry pieces with bones)
    4 large onions
    6-8 large potatoes
    2 cups frozen peas
    Cinnamon stick
    2-3 tablespoons canola oil
    1 tablespoon coriander powder
    1 tablespoon cumin powder
    2 tablespoons vegeta
    1 tablespoon garlic paste
    2 tablespoons tomato paste
    Salt to taste
    Black pepper to taste
    INSTRUCTIONS:
    1. Fry the onions until they turn golden brown.
    2. When the onions start browning, add the meat (beef, lamb or goat) and stir for a minute or two
    3. Add black pepper, coriander powder, vegeta, garlic paste, tomato paste and cinnamon stick. Mix to combine, add water and cook for 30-35 minutes or until the meat is about 80% cooked
    4. Add cumin powder, potatoes and 1-2 cups of water
    5. Cook the potatoes for 10-12 minutes. Then, add the peas, adjust salt to taste, add a bit of water and simmer on low for 5 minutes
    6. Stir gently to avoid mashing the potato, taste and adjust salt and seasoning
    HOW MY FAMILY & I EAT THIS: I served this with rice, but it also goes well with bread rolls, kisra or chapati.
