Ok. True story. I had never made corned beef...was completely clueless, but was going to try. I worked in a grocery store at the time, and everyone was buying all the things for St. Patrick's Day. I decided I was going to get in on this. I got the corned beef and put it in the crock pot...I cooked and cooked and cooked. I told my husband something was wrong with that meat because it was still red....yep, I threw it out, lolol. Needless to say, I was so embarrassed after the fact.

Happy St Patrick’s Day weekend from Ireland 🇮🇪 I’m Irish and I must admit I don’t like corned beef. I do love bacon & cabbage with mashed potatoes though 🤤 (bacon - I think ye call a ham joint?! Not the thin skinny slices of bacon 🥓 we can those rashers)
We call them ham hocks.

I don't care for corn beef (the smell makes me feel sick but I make a version of that pistachio pudding and I can't wait to make that baked cabbage. That looks so good!

We cook with alcohol. It's not the same as consuming it. I can't make corned beef or our beef stew recipe with out the beer. The flavor is amazing.

So not healthy but it's so yummy.
I don't mean to sound rude, but I'm genuinely interested as to why St Patrick's Day is so important in America. I live in the UK on the coast line of the Irish Sea and the only people who celebrate it here are the youngsters who use it as an excuse to dress up and have a few drinks. Our patron Saint is George and I've never understood why we don't make a big thing of April 23rd.
In my family, we celebrate to keep the Irish culture alive and that started when my grandparents came over. We don't like cooked cabbage, so we eat Cole slaw with our boil. It also included a parade with the other kids from the Irish dancing school. We would have a Cailee (dance) after dinner. For us, it is remembering where we came from.
