Meatballs over rice remind me of a local restaurant in my area that used to make "porcupine balls". Ground beef mixed with cooked rice and probably onions cooked in a creamy beef sauce. So delicious. A real stick to your ribs winter meal!

The meatball dinner looks yummy! You could have used a little bit of water for the broth you were short of, as I do that. I would have used the juice from the mushrooms in the gravy too, but I know you aren't crazy about mushrooms, so maybe didn't want to use the juice. 🙂 I drained a can of corn I used months ago and saved the juice in the freezer for future soups. I used it tonght in my turkey noodle soup and it really made a difference in the taste! YUM! I used tri colored rotini noodles in my soup. I LOVE those, my favorite noodles. I have enough soup leftover for tomorrow too. Wish I would have known the fugal things I know now when I was younger, as I wasted a lot without knowing... I have heard that dogs prefer to eat cat food cause it has higher protein in it than dogfood. Blessings and love.... ❤ Maybe the worcestershire sauce made the gravy bitter? Wonder if a bit of sugar added to it would help? Sorry it wasn't better.
I am looking forward to making the sombrero salad...I just need to get the Catalina dressing. I'm so grateful for your response...ideas help to prepare new dishes ...chicken patties look so yummy too..thank you and God bless to all in your home.
I always add one beaten egg to the mix of potato and chicken, salmon. because I had them fall apart on me too. It doesn't really matter we eat them anyway. lol
The Salisbury Steak I made was made from hamburger I seasoned from the recipe " Easy Homemade Salisbury Steak" had a fresh taste and delicious beefy gravy. Uses all the ingredients you already have.
I prefer fresh mushrooms but don't care for cream of mushroom nor canned mushrooms. Maybe the canned mushrooms gave the sauce a taste you didn't care for? The chicken potato patties look yummy. 😋 Love hearing Prissy chatting in the background. 🐱
I am glad that you are using up the food in your freezer. I am doing the same. You must have inspired me! I did not start a list though. The freezer in my fridge is pretty smalI so doesn't hold that much. I have never thought to make chicken patties with canned chicken, I usually use canned salmon, but it sounds like a great idea.
It is the worchestershire that taste bitter. Really should measure that! A little of tgat goes a long way. Go with a shy side. Your potatos look so yummy - i love creamy potatos. I will eat your mushrooms pass them over. Lol hugs and enjoying you trying new dishes.
I believe the reason they fell apart was a combination of things. Probably should have cooked in 2 batches with 5 each batch and also flipping to quick.

I actually made this from a recipe I had gotten from In the kitchen with m ma Mel. I made mine on the slow cooker. I’m not sure if our ingredients are the same at this moment, but I know that it was easy and really did taste like Salisbury steak but with meatballs. Very good! I liked that you could take as much or as little as you wanted. I think it should freeze well after cooking too.o just don’t think you really needed to cut the meatballs because they were sort of small to begin with.
They are easier to flip over too if not so crowded in the pan. I would also coat the patties in a bit of flour before the egg, then the bread or cracker crumbs. Also, don't move them around so much. Let the crust form.
I’m thinking maybe the w sauce gave your gravy a bitter taste? I made meatballs once and put too much w sauce and they were not good. I just cut way back in the recipe. I have some canned chicken to use up (then replenish for my pantry stuff). Have a super day!

I think adding shredded cheddar cheese to your chicken patties would be yummy and maybe a little sour cream also

real feel is getting down to 12 degrees tonight or early morning. I think baking them would be a great option. I prefer reality.

Yes the egg would have helped hold things together. My aunt would say hold your face just right.
