  • In this episode of Hooked On Onyx, Morgan talks with Preston Stewart, our Director of Chocolate, to learn more about our craft chocolate program - Terroir. Terroir by Onyx is a project that aims to explore "The Land" that provides us with so many wonderful resources. Unlike large-scale, commodity, manufactured chocolate, craft chocolate (often referred to as bean-to-bar because all steps are done in one location) focuses on the genetic potential of fine flavor cacao instead of focusing on producing the most or cheapest chocolate possible. It also gives a chocolate maker the opportunity to add additional flavors into the chocolate that make it more unique with additional inclusions in or on the chocolate to give it a fun texture and/or complementary or contrasting flavors.

    Are there different processes for cacao the same way there are different processes for coffee?
    Like can I get a washed chocolate?
