All your criticism of the texture just makes my Central European Slavic self used to our honey version of gingerbread and an Eastern European honey cake go "yep, that checks out." 😂 I definitely have to try these!
Your honey cakes look wonderful! Egg measurements in historical cooking can be tricky because our modern eggs are generally much larger. These look like they came out perfect! Great program, as always.
My 4th great grandfather was 9 years old when he came from Germany on The Thistle to Philadelphia Pennsylvania. He traveled to North Carolina in the early 1760s and settled about 4 miles from where i live today. Even before I watch the video I have to comment on how svelte Ron is looking these days. Since he still loves Justine's cooking, it must be all the new house labor that is leaving its mark.

I bought a home during the housing crisis there and my real estate agent that helped me look at houses told me she was a descendant of Pochahontas...a great-great-etc granddaughter. When I was younger, we made homemade flour with a grinder & if we ground the wheat fresh, we would not need to use yeast & would get light, fluffy bread/cakes. 💛
I feel like I might actually like the texture of these! Although they do seem quite filling, so the small cakes are doubly good for that reason. Also I agree Justine! Halloween is my fav holiday and fall is my favorite season. I am so ready! It's coming so fast.
With your input, I’ll try to make it with less flour, whisk the eggs up until foamy, fold them in and see if that helps at all with the texture you are describing. I’ll let you know how it comes out! Be safe with those floods and can’t wait for the fall decor!!

We live in Idaho and really only travel to in the Pacific Northwest because this is where all our children and grandchildren live. We had a very similar event here in ur city cemetery called "Stories N' Stones". Some quite interesting stories told by great reenactors. Our Old Time Fiddlers group played period music, too. It was a great event...if you have a chance to attend one, you should!
Hello, love you videos. I couldn’t help but think that while you were reviewing the honey cakes and a few other recipes you mentioned that the cakes were quite dense. I know that modern day wheat has much more gluten in it than older wheat varieties have. Baked goods have more lift but they can be gooey too. With that thought in mind, have you thought of making maybe a small sample of a recipe with a wheat variety like Einkorn? Or a similar variety? Einkorn wheat has never been hybridized or gmo’ed. I love making historical recipes that I find. Sadly I can’t eat as many baked treats anymore. Wish you the best with the house build and the upcoming wedding.
Don't worry. We won't hate Ron for his honest opinion. It's not a reflection on Justine's cooking skills. Not all recipes are great. I am guessing that the Honey Cakes are good for travel where it won't go bad very quickly. In reality when you eat anything when you are very hungry, anything edible is tasty.

Hi Ron and Justine: Have you ever made Pioneer Candy. Might make a good show. Citrus peel strips left to dry out in sugar (especially at Christmas) and potato candy. You two are so funny! I was surprised when John Townsends name popped up towards the end, I love their channel as well! I'm going to see if my local library has a copy of that cookbook, I want to try to make some recipes. I make some of the ones that you present on the other channel as well, I just make it a low carb version. My favorite season is Fall and my birthday is in Fall as well! I'd just been depressed over the past few years, but I have a handle on that now and am working on mind-body-spirit healing, including eating more wholesome whole foods that I make myself, including deserts and snacks and making it sugar free and carb free (my doctor made me as I'm pre-diabetic/insulin resistant and I need to keep glucose stable and its helped me drop lots of weight as well without meds). I'm even learning to use real whole foods as remedies and finding what works for my body. I used some coconut butter on my mosquito bite that was driving me crazy (its on the side of my foot) and it actually helped. Hoping to visit St. Genevieve in the Spring or Fall of next year, especially for that festival you talked about, it sounds lovely! Maybe someday I can move there, it sounds like a kind of town that I would enjoy, but probably wouldn't be for 1 to 5 years. At least I could visit. Maybe someday I can move there, it sounds like a kind of town that I would enjoy, but probably wouldn't be for 1 to 5 years. At least I could visit. I had family in El Dorado Springs and grew up loving to fish and loving the country and learning gardening and eating fried polk stalks and catfish😀
