    Don't underestimate Jacques Pepin's handyworks....It looks so easy when he does it, but when i did it tonight for the first time in my life, it took me about 1/2 hour to debone ONE quail..!!! And how much did he take to do it? 5, 6 minutes? He is THE professional...Did i mention also that my deboned quail looked like a deformed, shapeless ball of carcass?

      5 to 6 mins with explanation. But I think he once said it should be less than a minute to debone a bird.

      He actually takes about 40 seconds in real life. I've seen him when he isn't going super slow and explaining everything.

      Ben Tre cooker = appliance to cook... stove, gas or electric or wood/coal fired. cook = person who cooks.

    He stuffed the filets up the bird's butt, lol. Seriously though, I need to try this with chicken. I love his programs, he teaches technique, not just recipes. His voice is so relaxing, and I love his accent. :)

    He does modify the technique for Quail compared to chicken. He does not debone the drum stick on the quail. Perhaps too small a bird? I have some plump Bobwhite males ready for the chop so will see how it goes!😊👍🏻

      Typically when you butcher, you keep a separate bin of all entrails and leftover parts. It is sort of like a "throwaway" stock bin. We throw all of it into a bucket and then throw into a pot later.

    For people with healthy teeth, deboning is not required. Quail bones are delicate, crunchy and delicious.

    He sure makes it look easy! Quail in my opinion is the perfect amount for a full grown human being to be satisfied and im 210 6 ft 4... ill be good with that and some starch

    That time i did 6 quails because the package i bought has 6. And the time i spent for it, i dont think i will do it again...you do it for me next time or i just buy it deboned!!!
