The BEST tasting sourdough bread I have ever made!

- I have been experimenting with using freshly ground Einkorn Wheat flour to make sourdough starter. This is the second loaf of bread I have made with this starter, and it is fabulous!
Ingredients:
200 grams starter (7.05 oz)
330 grams water (11.29 oz)
250 grams bread flour (8.82 oz)
250 grams Einkorn all purpose flour (8.82 oz)
11 grams sea salt ADDED AFTER AUTOLYSE (.39 oz)

If you have a gluten sensitivity, be sure to do some research on this amazing grain. Many people with gluten sensitivity (not Celiac disease) are able to eat Einkorn wheat products.

I am fascinated with your video. pray tell why a doughhook isn't used. Other channels don't use them either. Hopefully I don't embarrass myself from asking. but here goes😮
I am guessing you mean a dough hook on a mixer? Sourdough yeast doesn’t need the heavy kneading that commercial yeast does to develop the gluten. Instead it ferments, along with the gentle action of folding. It really is my favorite way to make bread now. Also the long ferment makes the bread healthier for you.
So this isn’t yeast bread? It doesn’t rise. It’s like banana bread etc.
