Good intro video! But my understanding is that you shouldn't delete the "empty tags" as you were doing because they're not really empty - they actually contain content in the form of an extra return character(s). Instead, you should open up each of those "empty" paragraph tags in the tag tree, select the box icon inside each, and then right-click to show the contextual menu and select the "Change Tag to Artifact…" option (it's fine to let Acrobat choose the Artifact type). Now the tags really are empty. To remove them all in one go you can click on the Documents tag in the tag tree and choose "Delete Empty Tags" from the contextual menu.
