My Chinese friend taught me to cut down the back of the chicken on both sides of the spine & remove the rest of the body in one piece doing the legs pretty much like you did making it easy to stuff and make look like a regular stuffed chicken but without bones. It can also be skinned and rolled then covered with the skin, rolled and tied and roasted. The bones can be used for stock for gravy.

You're clearly untrained, unskilled and unable to handle that paring knife, you would surely hurt yourself if you were allowed to touch the real tools. And besides, didn't that poor chicken suffer enough at its demise without you shredding it now?
