No, it certainly didn't NEED two guitars, but having to guitars adds a lot to the sounds and makes it sonically more interesting. For one, one of the the guitars is a normal acoustic just softly strumming, while the other is a 12 string and only being strummed once for each chord change. It may be a subtle effect, but it's a nice sound, and it'd certainly be missed if you took away the 12 string guitar. It's subtle things like this that differentiates good musicians or good audio engineers.
