This is absolutely fantastic; the ghoul horses would actually look really good painted up as desiccated mummy horses rather than rotting undead horses. Great use of bits and kits!
So covering gel super glue in baking soda gives a very nice wind swept desert sand texture. Obviously the gel part of the is critical, also throwing some egg shell in the glue before dumping on the baking soda makes for some nice pottery shards.

You could wrap the zombie horses in strips of fine brass sheet to simulate mummy wrappings.
