we don't put ginger and garlic in sambar, our sambar is less complicated just boil the dal then add veggies, sambar powder cook for 1 whistle, now add tamarind pulp salt and coriander leaves and boil for 3 mins , temper with mustard, jeera and methi seeds must and curry leaves and hing close the lid after tempering to lock flavour
Yes in south Indian sambhar ginger garlic is not added.
Yes we don't add ginger garlic paste, but will do add crushed garlics along with skin.

Aur sambhar mei jada sabji nahi dalti aur sabji ko acchey sei paka lete hai matlab sambhar mei na sabji na daal ka pta chalta hai....ekdam patla....aur dosa roti se b mota hota hota hai ....thick....

In kerala we do not use jeera in tadka of most of curries especially sambar. No ginger too.
Avoid paste of green chilli insted add slited whole.
Originally the entire process is ulta 😊 boil dal, add veggies, then tamarind and then sambar masala and finally tadka of rye redchilly and curry leaf. Pinch of hing gives fragrance though hing already there in sambar powder 👍🏻my mom adds 3..4 methi dana in tadka too.
Hello kiranji!! Since you asked how the making of sambar is will tell you that there is no need to add coriander powder extra. It is all there in sambar powder. You can try mtr sambar powder. Add hing to the tempering for sambar. You can add quarter spoon of fenugreek seeds while soaking dals for dosa. This helps in fermenting of the batter along with poha.rest everything is fine with your preparation.

In Karnataka most of the people will prepare alu palya, copra chutney
(only green chill and onion,alu)for palya
Chutney (Chopra, fried chilli,garlic, ginger,fried gram coriander, curry leaves,salt , jaggery)
For dose we add oil and butter also

sambhar looks tempting and it's different way that you prepared...Our south Indian sambhar...we don't use ginger garlic paste or Dania powder ... first pressurecook the toordal and veggies(3whistles) together after that boil dal n veggies by adding 4 tbspoon sambar powder u can use MTR sambhar powder with tamarind juice and little jaggery
Once it's boil for 8mins then give mustard,curry leaves and hing tadka..it's done..v usually have with idli..it tastes yumm...

Try to make your sambar powder at home .At soaking time of urad and rice add 1or 2 tea spoon of methi dana and cooked rice or avlakki u can able to make soft idlis. For idlis batter temperature should be normal don't make directly from the fridge batter😋

Once the sambar starts to boil then add fried lady's finger and corriander leaves it tastes very good and curry leaves also but don't add garlic .dosa looks good
Boil thor dhal with 1 spoon moong dhal. Boil veggies separately. Try Grinding coconut with sambhar powder and one tomato.and add to boiled veggies and dhal. Hi, i see your videos regularly and really love the possitive vibes and thought which you share. Time Management is also so helpful. Please try make your sambar without ginger and garlic. Sambar should never garlic. The tadka which you put in the end - you should add rai/curry leave/ red chilly and hing.. Dont put onion in the tadka for sambar.
Ginger garlic paste nahin dalta hai sambhar mein . Har ek region ka alag sambhar banta hai . Palghat side mein masale pees kar daalte hain aur Chennai side mei sambhar powder dala jaata hai . Hum log Tamil Brahmins hain toh isliye kaafi had tak Sambhar masala ko roast karke mixer grinder mein paste banakar hi daaltein hain.
Yeh Ghar ghar ka swaad hai aur mujhe pata hai ki being a Punjabi you can excel in any variety of cooking be it South Indian or Any other region .

I live in joint family and everything is going here against my desire.....even i cant decor my home according me....if i do kids make it messy again and it makes me so annoyed and disturbed...i have been suffering from depression and anxiety...the 2nd thing is that whenever i clean my home or do any other work it takes tooo much time..i get tired...i cant stick and concerntrate on a work until it is completed..
