A second before he switches the ring into the hand he uses to make it disappear you can clearly see someone right under him sticking their hand out waiting for him to drop the ring. When he does the "switch" he places the ring on his thumb and drops it behind the counter real fast, you can see him place his right hand on the counter before that's when he drops the ring on the helper, while he is talking his helper is placing the ring in the shell. Simple and fast. Pay close attention. You can see the helper right under him

Just slight of hand. He pulled the ring away when he put it on the counter. He slipped the egg into the shredded paper. And he cracked the egg on top first because he dropped the ring inside it then. Yoke naturally floats to the top. Ring falls to the bottom. Simple trick, well done. Any decent magician could do it.
