Steak is way to over cooked for me. Why would anyone destroy beautiful steaks with that absurd and technically flawed preparation. So sad. Everyone with a camera thinks they're a chef or thinks they have something to contribute to world of culinary arts. If I was her, I'd take that video down asap and save myself some embarrassment. That's sous vide on steroids. Should have pulled steaks at 100 degrees quick sear to 120. A little rest to your doneness liking. Looks great.
When you are done take the butter juice and put it in a storage container and use later for anything. The flavor will be amazing.
