OK, I hydrated the 3 packs of dry yeast I usually use for the first time and it took almost 5 days to get active. When I pitched it dry it usually took 48 hours to go active.
Did you take the temperature of the rehydration water before adding the yeast? If it was much above 105 degrees F. you probably killed off allot of the yeast cells. Also, do not rehydrate in distilled water. The yeast cells need micronutrients found in natural waters to help them wake up healthy and ready to go.

What about a refrigerated liquid yeast pack that is 2 months old. My yeast calc says it has a viability % of 55. Equals 55 billion +/- for the pack. I need 209 billion. Dates are important right? I know i will need a starter.

@@diverbob33 Yes, I was very careful with that. I cooked the water down to 18°C before pitching the yeast.

Same question. You’re rates are for 5 gallons in the fermentor right ? That what I think is right.
do those yeast numbers reflect what you need for a 5 gallon batch ?
