BETH’S BACON MAC & CHEESE BITES
Makes 18 hors d’oeuvres
INGREDIENTS:
1 tbsp (15 g) butter for greasing tins
1 cup (140 g) tiny elbow macaroni
3 tbsp (45 g) butter
2 tbsp (15 g) flour
1 cup (240 ml) milk
1/4 tsp (1.25 ml) cayenne pepper
1 tsp (5 ml) salt
1 minced garlic clove
freshly cracked pepper
1 cup (240 ml) sharp cheddar cheese + ½ cup (120 ml) mozzarella for topping
1/2 cup (120 ml) cooked bacon, chopped
1 egg
2 egg yolks
1/3 cup (40 g) flour
¼ cup (60 ml) chives
METHOD:
Preheat oven to 375F (190C).
Grease a mini muffin tin lightly with melted butter and set aside.
Boil pasta according to package instructions.
Cook bacon in skillet or in microwave. To microwave line a plate with paper towel, place bacon on top, and then place more paper towel on top. Microwave on high for 6 mins until browned and crispy. Allow to cool on towel, and chop into a rough chop.
Then in a large skillet prepare the cheese sauce, melt 3 tbsp butter, add flour and whisk and cook for 1 minute then slowly whisk in milk, whisking all the while, a smooth sauce will develop. Add cayenne, salt, garlic and pepper.
Then add cheddar cheese, and whisk until smooth. Remove from flame and allow to cool slightly.
Drain pasta and transfer it into a large bowl. Add cheese sauce and stir to combine. Then add egg and egg yolks, flour, and bacon. Stir to combine.
Using a mini ice cream scoop portion out into muffin tin, and top with the mozzarella cheese.
Bake for 13-15 mins until golden brown and cheese has melted. Allow to cool to set up and become stable.
Place on platter and top with freshly snipped chives. Serve with champagne! Enjoy!

Made this for my daughter to bring to a New Years Eve party. Everyone loved it. Easy to make and very delicious. I cut down the cheddar to 3/4 cup and added 1/4 cup of asiago cheese. Substituted the chives with green onions since that is what I had on hand.

Hey Beth, thanks for this fabulous recipe! I made them yesterday for a get together and they were a hit! I skipped the bacon but added mushrooms, green chillies and a bit of onions instead. Also used almond milk instead of normal milk hoping it wouldn't taste weird haha and it didn't! Yay! They were yum! Again, thanks for this! :) x
Thanks for another great recipe! :) I replaced bacon with 1 thinly sliced and cubed lamb sausage just to give that kick and it tasted heavenly. I made a veg batch as well and added 1 small grated courgette instead of bacon :) Have a great, happy and safe new year! Happy New Year Beth! Xx

I just made this gonna bring it to my relative's house. But when it came out of the oven I had to try it! So I had one and it was really good. Except it wasn't enough salt for me when I put half a teaspoon. So for the next Batch I added more salt. And BOOM! They were delicious! And I added ham instead of bacon, no Kayan pepper and added some bread crumbs on top b4 baking

I made a double batch of these bites on 2/12/16 for a girls group meeting and they were enjoyed and a few of my friends said Mary you always make something nice for our events. I told them check our Entertaining with Beth on UA-cam you will love her and her recipes!
Beth, could you show us how to make a prime rib! I can always trust your recipes and I know you'll share with us the best techniques and methods (since there are surprisingly a few ways to make it). Is there a way you can make these ahead of time? Can you make the Mac and cheese before hand and leave it in the fridge and then bake then when guest arrive? Or does this recipe need to be baked right away? I would love to make these for New Year's Day but I don't want to be cooking while my guest are there.

Isn't buying grated cheese not good for you because they add something to prevent it from clumping. Aside from that, i think grating the cheese yourself doesn't take much time, does it?

Entertaining With Beth can I use slice cheese? I saw a recipe of mac and cheese and they put the slices. If so, how many? and if I want to double the recipe do I have to put 6 eggs?!
hmm I wouldn't use slices as it won't melt as easily, grated is a better way to go. And yes if you are doubling the recipe 6 eggs (2 full eggs + 4 egg yolks) is what you need :) Enjoy!

can you freeze these? if so, how would you defrost and/or warm up again? my 1 and 3 year old would love these for lunch that is why I am asking
Oh sure! You could make these in a larger muffin tin for a lunch serving. Then freeze in the tray, then once frozen pop out of tray and transfer to a re-sealble plastic bag. And then heat in microwave, or oven as needed. Great idea! :)

+Nicole Estrada ha! No worries at all :) ok so after baking yes you want them to cool down completely then cover with foil in tin and freeze for about 2 hours or so until they are hard. Then pop out of tin and transfer to ziplock bag and reheat as needed. They will be good for about a month in the freezer enjoy! :)

1. My sister is muslim and I would love to share this with here, what can I replace the bacon with ... some ham perhaps?
2. I have family members that cannot handle yellow cheeses i.e gouda and cheddar so well, is there perhaps an alternative white cheese that I can use in its place?
Hi Lindy! Sure you could omit the bacon for your sister, but I wouldn't replace it with ham, she probably won't eat that either. I believe muslims don't eat any pork products :) But you could replace with some frozen peas that would be yummy, and pair with Mozzarella cheese which is a nice melty, white cheese. Or provolone or Swiss cheese would work too! :) Enjoy!

Hello Beth, Can this be made ahead of time or does it need to be baked off right away?
Yes you can make it ahead of time, place the batter in the tin, and then pop in fridge. Then when guests arrive place them in the oven and bake. Much better to do that way so they are fresh, then bake ahead of time :) Hope you enjoy!
I don't have the mini muffin tin just the regular size.. How long should I cook it if I'm making bigger ones?
