- Did you know that Sturgeon Caviar is one of the most sought after luxury food items in the world? We visit Fond du Lac, WI during sturgeon spearing season to see if we can get our hands on some caviar for ourselves. What makes this product so treasured is that the sale of it is illegal in Wisconsin and only a handful of people know how to take the Sturgeon eggs and turn them into caviar. We meet up with the owner of Wendt’s on the Lake Shawn Wendt as he tours us around and introduces us to Zach and Norb, a team of Caviar makers in Fond du Lac, maybe the last of their kind. Luke also prepares classic Wisconsin Deviled Eggs utilizing Sturgeon Caviar.

I just made my 20# of caviar on Sunday from my 80# fish from Sat.. eating some right now. Mostly they way they did it seemed pretty good, but there is room for improvement in what they were doing. The caviar is wonderful.

Absolutely!!! Because Shawn needs his youngsters in the family to do the dirty work to keep his hands clean. However, he had his hands on when pulling out of the sturgeon that wasn't his...then further dirty by transfer to relation to also get their hands dirty.
There wasn't snow on the lake, but trucks everywhere this last season end of year. Last season 2020 was a quad year...so yes. Also, whoever speared the sturgeon in the video that Shawn pulled from will have a document trail as the fish needed to be registered...so can see when this was actually made and what fish the eggs were harvested from. That info should be public knowledge also as it's registered with the state

I love caviar, crackers, onions and a bit of homemade garlic vinegar I’m too poor to buy the good stuff but I’ve made it myself from a farmed sturgeon a acquaintance sold me. ($180 for a whole freshly killed fish.) Sturgeons are soooo expensive! #MKESTRONG
What farm??? I'd love to know. I will definitely buy the sturgeon...my favorite protein. But I thought it's illegal to farm...and then sell...wild game or fish...

Caviar goes bad in like 4-6 weeks. How do they eat all that? And on top of that it seems like no one actually eats the meat either. Just seems wasteful to me. Sturgeon meat is actually really good.
I'm from the Bay area in Wisconsin they most certainly do eat the meat. Smoked sturgeon is great
